1 whole Medium Red Onion, Cut Into Chunks
3 stalks Celery, Sliced
2 whole Carrots, Peeled And Cut Into Chunks
1 1/2 tsp. Kosher Salt
1 tsp. Black Pepper
1/2 tsp. Ground Sage
1/2 tsp. Ground Thyme
8 whole Bone In Chicken Thighs
1 whole Half-stick Land O Lakes® Salted Butter, Cut Into Small Pieces

Steps:

  • Preheat the oven to 425 degrees. Place the bread cubes, cornbread cubes, onion, celery, and carrots on a sheet pan. Toss together with your hands. Nestle the chicken thighs all around the pan, skin side up. Mix together the salt, pepper, sage, and thyme and sprinkle it all over the chicken, bread, and veggies. 1 (4 1/2-pound) whole chicken, giblets removed and discarded
2 stalks celery, cut into 1-inch pieces
2 carrots, cut into 1-inch pieces
1 onion, quartered
1/4 cup fresh parsley leaves
1 tablespoon black peppercorns
2 bay leaves
1 teaspoon salt
2 (6-ounce) packages buttermilk cornbread mix, baked according to package directions
6 frozen buttermilk biscuits, baked according to package directions
1/2 cup butter
2 1/2 cups chopped onion
2 1/2 cups chopped celery
1 tablespoon minced garlic
1 tablespoon poultry seasoning
1 teaspoon rubbed sage
1 teaspoon dried thyme leaves
2 large eggs, lightly beaten

Steps:

  • In a large stockpot, bring chicken, next 7 ingredients, and water to cover to a boil over high heat. Reduce heat, and simmer for 45 minutes or until chicken is done. Remove from heat, and let stand for 30 minutes. Remove chicken from broth, and set aside until cool enough to handle. Shred meat, discarding skin and bones. Reserve 2 cups shredded chicken, and set aside remaining chicken for another use. Strain broth through a wire mesh sieve, discarding solids. Reserve 5 cups broth, and set aside remaining broth for another use. Preheat oven to 350°. Spray a 13x9-inch baking dish with nonstick cooking spray. In a large bowl, crumble baked cornbread and biscuits. In a large skillet, melt butter over medium heat. Add chopped onion, chopped celery, and garlic, and cook for 8 to 10 minutes or until very tender. To cornbread mixture, add poultry seasoning, sage, thyme, cooked vegetables, and reserved 2 cups chicken, stirring until well combined. Add eggs, stirring until combined. Gradually add reserved 5 cups chicken broth, stirring until dry ingredients are moistened. Spoon mixture into prepared pan. Bake for 35 to 45 minutes or until center is set. Let stand for 10 minutes before serving.

1/4 cup butter, cubed
2 cups chicken broth
1-1/2 teaspoons dried thyme
1 teaspoon poultry seasoning

2 large eggs, lightly beaten, or 1/2 cup egg substitute
1 package (12 ounces) unseasoned stuffing cubes

1 can (10-3/4 ounces) condensed cream of chicken or mushroom soup, undiluted
1/3 cup water

Steps:

6 cups chicken broth, divided
4 cups crumbled cornbread
5 biscuits, crumbled
½ cup margarine, melted
½ cup chopped celery
1 small onion, finely chopped
3 eggs, beaten
1 teaspoon sage
1 teaspoon black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large saucepan, bring the chicken broth to a boil.
  • In a large bowl combine the crumbled cornbread and biscuits. Pour in 3 cups of boiling broth; cover and let stand.
  • Meanwhile, heat margarine in a medium skillet over medium heat. Saute celery and onions until tender. Stir into cornbread mixture.

This is my take on an old low country recipe for chicken. I make it with chicken breasts. The more traditional recipe calls for chicken thighs. All versions require bourbon. When they're in season, peaches can be substituted for the apricots. If you can find a jalepeno with heat, that can sub for the cayenne.

4 chicken breast halves, skin on, bone in
1/2 teaspoon coarse salt
1/4 teaspoon fresh ground pepper
2 tablespoons sweet butter
1 large onion, chopped fine
1 teaspoon cayenne pepper (if it's old, it's not real anymore) or 1 teaspoon paprika (if it's old, it's not real anymore)
3 garlic cloves, chopped fine
1 1/2 cups scallions (chopped, green and white parts)
1 bunch Baby Spinach, stemmed and washed (roughly one pound)
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/2 cup Bourbon
1 cup fresh apricot, peeled and chopped
1/4 cup raisins
1/4 teaspoon nutmeg, preferably fresh grated

Steps:

  • Preheat oven to 400°F.
  • Salt and pepper chicken and place in 13" x 9" baking pan and set aside.
  • In a large skillet, melt butter over medium heat.
  • Add onion and cook, stirring occasionally for at least five minutes.
  • Add garlic, pepper (or paprika) and all but 2 tablespoons of the scallions.
  • Saute for an additional three minutes.
  • Add the spinach and stir to combine.
  • Saute for two minutes or until spinach is wilted.
  • Spread onion/spinach mixture over chicken in baking dish.
  • Gently pour lemon, orange juice and 2 tablespoons of bourbon over the chicken.
  • Bake for 30 minutes.
  • While chicken is baking, combine apricots, raisins and remaining bourbon in a small saucepan.
  • Simmer for three to five minutes.
  • When the chicken has been baking for thirty minutes, remove from oven and spoon apricot mixture over the top.
  • Sprinkle with fresh grated nutmeg and return to the oven for another 10 to 20 minutes.
  • Serve garnished with remaining sliced scallions.

1/2 pound white bread (about 8 slices)
1/2 cup butter
Chicken or turkey liver and heart, cut into small pieces
1 cup onions, sliced about 1/3 inch thick
1 cup celery, cut about 1/3 inch thick
2 tablespoons water
1/2 cup hot water or stock
1 teaspoon thyme
1/4 cup fresh parsley, chopped fine
1 teaspoon salt
1/4 teaspoon pepper
1 large egg, beaten with a fork

Steps:

  • With fingers break bread (including crust) into about 1 inch pieces. Spread on a large baking sheet and toast in a 325°F oven for about 20 to 30 minutes, or until golden brown and crisp, turning it over several times with a long spoon after the first 10 minutes, to keep bread uniform in color. Melt butter and add the chicken liver and heart. Cook for 5 minutes. Now add the sliced onions and celery, stir well. Add 2 tablespoons water. Cover pan and steam gently about 10 minutes or until vegetables are tender. Add the 1/2 cup hot water or stock to vegetables. More water may be added for a moister dressing. Pour vegetables over toasted bread, season with thyme, parsley, and salt. Last, add beaten egg, and with 2 forks mix ingredients until well blended. If any dressing remains after chicken is stuffed, it may be baked seperately in a well-greased baking dish on upper rack the last 40 minutes, covered with greased foil. This is enough stuffing for 3 to 4 pound fully drawn chicken.

1 tablespoon butter or 1 tablespoon olive oil
1 clove garlic, crushed
1/4 cup dry sherry
1/4 cup liquid honey
1 tablespoon fresh lemon juice
1/4-1/2 teaspoon salt, to taste
2 green onions, cut into strips
2 carrots, julienned (I usually use 3)

Steps:

  • In pan over medium heat saute chicken in butter or oil.

1 Cup White Wine

4 Mushrooms , sliced
1/4 Cup Grated Parmesan Cheese
2 tbls Minced Parsley

  • Combine first 6 ingredients , mix well. Divide mixture amoung 8 lightly greased individual casserole dishes. Place 3 artichoke quarters in the middle of dressing mixture, and place chicken on top. Top with Swiss cheese. Combine soup, wine, and basil and pour over the chicken. Top with mushrooms, Parmesean cheese and minced parsley. Cover with foil and bake at 350 for 40 minutes. Uncover and continue baking for 10 more minutes.
