I adapted this recipe to fit the Jorge Cruise 3 hour diet plan, from one that I usually make. Very nice in the summer. This makes 4 main course servings.

Yield 4 serving(s)

Number Of Ingredients 12

24 ounces firm tofu
2 cups mung bean sprouts, raw
1 cup bell pepper, diced
4 medium tomatoes
1/4 cup onion, thinly sliced (I like to use sweet onions)
12 ounces canned salmon (I use the ones in the pouches)
2 stalks green onions, sliced
1 large garlic clove, minced
2 tablespoons oil, Canola
6 tablespoons low sodium soy sauce
1 lemon, Juiced
1/2 teaspoon ground black pepper

Steps:

  • Heat oil and minced garlic over medium heat for two minutes to infuse the oil and take the bite out of the garlic.
  • Remove from heat and add the rest of the dressing ingredients. Set aside to cool while assembling the salad.
  • Cut the tofu into 1 inch cubes and layer in the bottom of a large bowl. Top with the bean sprouts, then the tomatoes, bell peppers, sliced onions, and salmon.
  • Pour the dressing over evenly and garnish with the sliced green onions.
  • Serve with some steamed rice.

Provided by es123

Number Of Ingredients 9

6 oz soft tofu
Juice of 1 lemon
1 tbsp olive oil
1/2 tsp salt
Freshly ground pepper
Dash of hot sauce
1/2 cup diced celery stalks
1/2 cup diced red onion
7 oz canned salmon

Steps:

  • Cream together the tofu, lemon juice, olive oil, salt, pepper and hot sauce until fairly smooth, and set aside. In a medium bowl combine the celery, onion and salmon. Gently mix in the tofu mixture. Adjust seasoning. Serve on whole wheat bread or inside a pita.

Tips:

  • For the best flavor, use high-quality tofu. Look for firm or extra-firm tofu that has been pressed to remove excess water.
  • Crumble the tofu with your hands or a fork to achieve a texture that resembles salmon.
  • Use a variety of vegetables in your salad to add color, flavor, and nutrients. Some good options include celery, cucumber, red onion, and avocado.
  • For a creamy dressing, use mayonnaise, Greek yogurt, or a combination of the two. Add some lemon juice, dill, and capers for extra flavor.
  • If you're using canned salmon, drain it well before adding it to the salad. You can also use fresh salmon that has been cooked and flaked.
  • Serve the salad immediately or chill it for later. It will keep in the refrigerator for up to 3 days.

Conclusion:

Tofu salmon salad is a delicious and healthy dish that is perfect for lunch or dinner. It's a great way to get your daily dose of protein, vegetables, and omega-3 fatty acids. Plus, it's a relatively inexpensive meal that can be made in just a few minutes. So next time you're looking for a quick and easy meal, give tofu salmon salad a try.
