1 teaspoon salt
1 cup plain yellow cornmeal
1/2 teaspoon McCormick's Montreal Brand steak seasoning
1 cup sharp cheddar cheese
1 lb ground chuck
1 cup chopped onion
1 medium zucchini, cut in half lengthwise and sliced (about 2 cups)
1 tablespoon olive oil
2 (14 1/2 ounce) cans of petite diced tomatoes, drained
1 (6 ounce) can tomato paste
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 350.
  • Bring 3 cups of water and 1 tsp salt to a boil in a 2qt saucepan over medium heat.
  • Whisk in cornmeal; reduce heat to low and simmer, whisking constantly, 3 minutes or until thickened.
  • Remove from heat, and stir in steak seasoning and 1/4 cup of cheddar cheese.
  • Spread cornmeal mixture into a lightly greased 11 x 7-inch baking dish.
  • Brown ground chuck in a large non-stick skillet over medium-high heat, stirring often, 10 minutes or until meat crumbles and is no longer pink; drain and transfer to a bowl.
  • Saute onion and zucchini in hot oil in skillet 5 minutes or until crisp tender.
  • Stir in beef, tomatoes, and tomato paste; simmer, stirring often, 10 minutes.

1 cup milk
1 tablespoon butter
1 cup quick-cooking polenta
1 cup grated Parmesan cheese
2 fresh basil leaves, chopped

1 tablespoon butter, chilled and cut into pieces
2 tomatoes, sliced
½ cup grated Parmesan cheese
2 fresh basil leaves, chopped

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease an 8x8 inch baking dish.
  • Place the water, milk, and butter in a saucepan and bring to a boil over medium-high heat. Add the polenta and stir with a wooden spoon until thickened, about 5 minutes. 2 cups Progresso™ chicken broth (from 32-oz carton)
3/4 teaspoon salt
1 cup instant polenta
1 1/2 cups finely shredded Parmesan cheese (6 oz)
1/2 teaspoon freshly ground pepper
1 lb ground beef round
1 cup chopped onion (1 large)
1 package (8 oz) sliced fresh baby portabella mushrooms (about 3 cups)
1 bag (6 oz) fresh baby spinach leaves
1 jar (24 oz) fire-roasted tomato and garlic pasta sauce
Chopped fresh basil, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat milk, broth and 1/2 teaspoon of the salt to boiling over medium heat. Gradually stir in polenta with whisk. Cook 3 to 4 minutes, stirring constantly, until thickened. Stir in 1/2 cup of the cheese and 1/4 teaspoon of the pepper. Spread polenta in baking dish.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
1 jar (14 ounces) tomato pasta sauce (any variety)
1 1/2 teaspoons chopped fresh marjoram leaves or 1/2 teaspoon dried marjoram leaves
1/2 cup shredded mozzarella cheese (2 ounces)

Steps:

  • Grease pie plate, 9x1 1/4 inches. Mix cornmeal and cold water in 1-quart saucepan. Stir in boiling water and salt. 1 pound ground beef
1 cup chopped onion
