SPICY GREEN TOMATO SALSA

Spicy Green Tomato Salsa image

A tasty twist to salsa; great served over cream cheese with tortilla chips or crackers! A great way to save those green tomatoes when there is an early frost. I created this recipe with the assistance of my daughter-in-law Carolyn and her niece Felicia. Thanks you two. Portion out remaining salsa into bags; freeze or refrigerate.

GREEN TOMATO PRESERVES

Green Tomato Preserves image

Someone in Recipe Request was looking for a recipe and in my efforts to help, realized that there were very few recipes for green tomato preserves. I have used this simple recipe for years and have won several blue ribbons at county fairs. Update 11/24/2007: I made this again for the first time in many years. After the review, I did toss in 1/8 cup to 1/4 cup crystallized ginger. It really adds a wonderful taste. I'm listing that as an optional ingredient. The yield was 6 cups and the cooking time was 2 hours. Enjoy!

Tips:

  • Choose ripe and firm Roma tomatoes, they have less seeds and water content, resulting in a thicker preserve.
  • Green chiles add a mild heat to the preserves, adjust the quantity based on your preferred spice level.
  • Use fresh pineapple chunks for the best flavor and texture, frozen or canned pineapple can also be used, but the taste and texture may vary.
  • Cooking the preserves in small batches prevents overcrowding and ensures even cooking.
  • To check the consistency of the preserves, place a small amount on a chilled plate. If it wrinkles when pushed with your finger, it's ready. If it's too thin, continue cooking for a few more minutes.
  • Store the preserves in sterilized jars and process them in a boiling water bath for at least 10 minutes to ensure a proper seal and prevent spoilage.

Conclusion:

Tomato Green Chile Pineapple Preserves offer a unique and flavorful twist to traditional preserves. The combination of sweet tomatoes, spicy green chiles, and tangy pineapple creates a well-balanced and versatile condiment. It perfectly complements a variety of dishes, from grilled meats and fish to cheese platters and sandwiches.
