12 ounces bowtie pasta, cooked according to package directions
1 pound cherry or grape tomatoes, halved (use multi-colored tomatoes if you can find them)
8 ounce fresh mozzarella cheese balls (ciliegine), drained
8 ounces prepared or homemade pesto, or to taste
1 cup freshly grated Parmesan cheese, or to taste
1 teaspoon freshly ground black pepper, or to taste
fresh basil leaves, optional for garnishing

Steps:

  • Cook pasta according to package directions. Drain and add to a large bowl. Note - If you don't want the mozzarella in step two to melt at all and want it to remain intact in balls, wait about 10 minutes for the pasta to cool a bit before proceeding.
  • Add the cherry tomatoes, mozzarella, pesto, and stir to combine and coat evenly.
  • Add the Parmesan, pepper, and stir to combine and coat evenly. Taste and if desired, add salt but I did not find it necessary.
  • Optionally garnish with basil and serve immediately if desired or chill before serving.

1 small shallot, minced
8 ounces dried fusilli
2 cups halved grape tomatoes

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.

1 small clove garlic, minced
Kosher salt and freshly ground pepper
1 tablespoon fresh lemon juice
2 tablespoons red-wine vinegar
1 teaspoon dried oregano
1/3 cup extra-virgin olive oil
1 pint cherry tomatoes, halved
1 pound gemelli or fusilli
1 fennel bulb, cored and chopped (1 1/2 cups)
3 tablespoons capers, chopped, plus 2 tablespoons brine
1 can (15 ounces) chickpeas, drained and rinsed
4 ounces salted mozzarella, cubed (3/4 cup)
1 ounce Parmigiano-Reggiano, grated (1/4 cup)
1/2 cup chopped flat-leaf parsley

Steps:

  • Using the side of a chef's knife, mash garlic with 1 teaspoon salt into a paste. Transfer to a small bowl; whisk in lemon juice, vinegar, oregano, and oil. Stir in 1/4 teaspoon each salt and pepper. In a fine-mesh sieve, toss tomatoes with 1 teaspoon salt; let stand 15 minutes to drain.
  • Cook pasta in generously salted water according to package directions until cooked all the way through. Drain (but don't rinse, which would waterlog the noodles), then spread on a rimmed baking sheet and toss with half of vinaigrette. Let cool completely, about 20 minutes.
  • Meanwhile, in a large bowl, toss fennel, capers and brine, chickpeas, mozzarella, and salted tomatoes with remaining vinaigrette. Add pasta; toss to combine. Season with salt and pepper. 2 cups dry pasta (penne, fusilli or bow-tie work best)
5 ounces fresh mozzarella cheese
10 cherry tomatoes
4 tablespoons pesto sauce
1 tablespoon olive oil

1/4 cup pine nuts
2 cups packed fresh basil leaves
1/2 cup extra virgin olive oil
1/2 cup freshly grated parmesan cheese

lemon juice
1 1/2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
kosher salt

4 cups mixed red yellow and orange cherry tomatoes
8 ounces fresh mozzarella balls, such as ciliegine

  • With a food processor running, drop the garlic through the feed tube and process until minced. Turn off the processor, add the pine nuts, and pulse a few times to chop. Add the basil and pulse a few times to chop coarsely. Then, with the processor running, add the oil through the feed tube in a slow, steady stream and process until a smooth, moderately thick paste forms, stopping to scrape down the bowl as needed.
