6 medium potatoes
1 small onion, finely chopped
1 cup celery, chopped
1 teaspoon salt
6 hard-cooked eggs, diced
2 eggs, beaten
½ cup white sugar
1 teaspoon cornstarch
salt to taste
½ cup vinegar
1 (5 ounce) can evaporated milk
1 teaspoon prepared yellow mustard
¼ cup butter
1 cup mayonnaise

Steps:

  • Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, 1 teaspoon of salt, and hard-cooked eggs.
  • While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet potatoes, making them ideal for potato salad.
  • Cook the potatoes properly: Boil the potatoes in salted water until they are tender but still firm. Do not overcook them, or they will become mushy.
  • Cool the potatoes completely: Allow the potatoes to cool completely before adding them to the salad. This will help to prevent the salad from becoming watery.
  • Use a variety of ingredients: Add a variety of ingredients to your potato salad, such as celery, onion, hard-boiled eggs, pickles, and mayonnaise. You can also add herbs, such as parsley or dill, for extra flavor.
  • Dress the salad lightly: Use just enough mayonnaise to bind the ingredients together. Over-dressing the salad will make it heavy and greasy.
  • Chill the salad before serving: Chill the potato salad for at least 30 minutes before serving. This will help to develop the flavors and make the salad more refreshing.

Conclusion:

Potato salad is a classic summer dish that is perfect for picnics, potlucks, and barbecues. With its creamy dressing, tender potatoes, and variety of ingredients, potato salad is a crowd-pleaser that is sure to be a hit at your next gathering.
