This casserole is my husband's favorite. I like that it's a complete meal that's very easy to put together. It's loosley based on the recipe on the seasoned green beans can, but this version is gluten free.

1 1/2 cups instant brown rice, dry
3 (5 ounce) cans tuna in water, drained
2 (14 1/2 ounce) cans del monte seasoned green beans (with onions, red peppers & garlic)
1 (14 1/2 ounce) can health valley cream of mushroom soup (heat & serve, not condensed. Other brands usually add gluten, which is fine if you're not on a glute)
3/4 cup milk
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees F. Spray a 2 quart casserole dish with nonstick cooking spray.
  • Spread the rice in the casserole dish.
  • Layer with tuna and green beans.
  • In a separate bowl, combine soup, milk & cheese. Pour soup mixture into casserole dish.
  • Bake, covered, at 400 degrees for 35 minutes, or until rice is cooked. Let cool about 15 minutes before serving.

1 1/2 pounds slender green beans, trimmed, halved crosswise
3 teaspoons salt, plus more to taste
2 large red potatoes, diced
1/3 cup freshly squeezed lemon juice
2 garlic cloves, finely chopped
1/3 cup extra-virgin olive oil
1 teaspoon dried oregano
3/4 teaspoon freshly ground black pepper
8 ounces cherry tomatoes, halved
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh Italian parsley leaves
9 ounces canned tuna packed in oil, drained

Steps:

  • Cook the green beans in a large pot of boiling water until crisp-tender, stirring occasionally, about 4 minutes. Using a mesh strainer, transfer the green beans to a large bowl of ice water to cool completely. Drain the green beans and pat dry with a towel.
  • Add 2 teaspoons of salt to the same cooking liquid and bring the liquid to a simmer. Add the potatoes to the simmering liquid and cook until they are just tender but still hold their shape, about 8 to 10 minutes. Transfer the potatoes to the ice water to cool completely. Drain the potatoes and pat dry with a towel.
  • In a small bowl, whisk the lemon juice, garlic, oil, oregano, 1 teaspoon salt and 3/4 teaspoon pepper. Place the tomatoes, basil and parsley in a large serving bowl. Add the tuna and toss gently to combine. Add the green beans and potatoes and gently combine. Pour the dressing over the salad and toss to coat.

1/4 small onion

1 (9 ounce) package frozen Italian cut green beans
1 1/3 cups instant rice

Steps:

  • Chop the onion. Drain the tuna. Cut the cherry tomatoes in half.
  • Heat oil in a large skillet. Add onion and cook until tender.

1 (7 ounce) jar tuna packed in olive oil
½ cup finely diced red bell pepper
¼ cup finely diced jalapeno pepper
¼ cup finely sliced green onions
⅓ cup seasoned rice vinegar
2 tablespoons soy sauce
½ teaspoon sesame oil
2 teaspoons Sriracha hot sauce
½ lemon, juiced, or to taste
1 pinch Korean red pepper flakes (gochugaru), or to taste

Steps:

  • Pour rice into a heavy pot and add water; swirl to allow rice to settle. Bring to a simmer over medium-high heat; do not stir. Reduce heat to low, cover, and continue to simmer for 15 minutes.

4 sushi-grade tuna steaks (3 ounces each)
Salt and freshly ground black pepper
Nonstick cooking spray
12 ounces haricots verts or slim green beans, trimmed
Juice and grated zest of 1 lemon
1 garlic clove, minced
2 tablespoons wasabi paste
4 scallions (white and green parts), sliced thin on the diagonal
3 tablespoons black sesame seeds

Steps:
