¾ pound cooked turkey meat
2 stalks celery
2 green onions
½ red bell pepper
3 tablespoons mayonnaise
2 tablespoons prepared Dijon-style mustard
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon salt

Steps:

  • Place cooked turkey meat, celery, green onions and red bell pepper in a blender or food processor. Finely chop using the pulse setting.

3 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon ground ginger
2 medium ripe pears, divided
SALAD:
8 cups fresh arugula or baby spinach
2 cups cubed cooked turkey
1/2 cup pomegranate seeds
1/4 cup chopped pecans, toasted
1/4 cup dried cranberries
2 green onions, sliced
Coarsely ground pepper

  • For dressing, place the first five ingredients in a blender. Peel, halve and core one pear; add to blender. Cover and process until smooth., Peel, core and thinly slice remaining pear. 1/3 cup Smucker's Chunky Natural Peanut Butter, stirred
1/4 cup light salad dressing
1/4 cup lowfat sour cream
1/2 teaspoon curry powder
1 cup prepared julienne-cut carrots
1/2 cup dried cranberries
1 pound fully cooked smoked turkey from deli, sliced 1/2-inch thick, cut into 1/2-inch cubes
1 cup diced Granny Smith apples
1 head Boston or Bibb lettuce, with leaves separated
