1 1/4 pounds lean Italian turkey sausage
2 tablespoons extra-virgin olive oil
3 assorted bell peppers, thinly sliced
1 bulb fennel, trimmed and chopped
1 large onion, cut into wedges
Kosher salt
3 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seeds (optional)
1 15-ounce can no-salt-added diced tomatoes
12 basil leaves, chopped, plus more for topping

Steps:

  • Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
  • Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.

1/2 large onion, chopped
1 red pepper, sliced
1 green bell pepper, sliced
2 tablespoons olive oil
1/2 teaspoon red pepper flakes (optional or to taste)
2 garlic cloves, minced
salt and pepper
4 fresh basil leaves, torn
1/2 teaspoon dried oregano or 1 teaspoon fresh oregano
1 lb Italian turkey sausage link (about 6 links)
1 (14 1/2 ounce) can diced tomatoes
1/4 cup red wine vinegar
8 ounces bow tie pasta, cooked

Steps:

  • Saute onion, peppers and pepper flakes in olive oil until onions start to brown.
  • Add garlic, salt, pepper, basil and oregano. Set aside.
  • Prick sausage links with a fork.
  • Saute in skillet with a little olive oil over medium heat until brown.
  • Add wine vinegar and canned tomatoes (with liquid).
  • Add the sautéed vegetable mixture.
  • Cover and simmer for 20 minutes.
  • Meanwhile cook pasta al dente.
  • Add cooked pasta to sausage and pepper mixture.
  • Stir and serve.

2 medium yellow bell peppers, seeded and diced
2 medium red bell peppers, seeded and diced

1 tablespoon onion powder
1 (16 ounce) package turkey kielbasa, sliced

8 Italian spicy peppers
1 Spanish onion
1 small fennel bulb
2 tablespoons olive oil
Salt
3 pounds link sweet Italian turkey sausage
4 hoagie rolls, centers removed
4 ounces aged provolone
Hot Green Apple Chutney, recipe follows
1/2 onion, sliced thin
1/4 teaspoon minced garlic
1/2 teaspoon minced ginger
2 Granny Smith apples, cored and diced into 1/4-inch by 1/4-inch
1/2 teaspoon pickling spice
2 tablespoons apple cider
Salt and pepper

Steps:

  • Cut the stalks off the fennel and slice the bulb lengthwise into 1/2-inch slices. Cut the onion crosswise into 1/2-inch thick slices. Lightly brush both sides of fennel, onion, and peppers with olive oil. Grill the fennel, onion, and peppers over medium heat for 10 to12 minutes, turning once. Remove from the grill and cut away the root from the fennel. Split peppers in half and remove seeds. Chop fennel, onion, and peppers into 1/2-inch pieces. Over low heat and applewood, hickory or oak, smoke the sausages for 30 minutes until they are no longer pink in the center. Toast the hoagie rolls. 1 package Honeysuckle White® or Shady Brook Farms® Turkey Breakfast Sausage Links
2 red bell peppers, sliced
1 onion, sliced
Salt and black pepper
2 teaspoons Italian seasoning
1 teaspoon chopped garlic
1 (15-ounce) can diced tomatoes
1 tablespoon tomato paste
Pinch of chili flakes
4 cups water
1 cup dry polenta
Grated Parmesan cheese and/or chopped parsley, optional

Steps:

  • 1.Preheat a non-stick or lightly oiled skillet over medium high heat.
  • 2.Add sausages. Turn sausages frequently with tongs to brown all sides. After browning (5-7 minutes) reduce heat to medium, add one-half to two-thirds cup water, cover, turn sausages occasionally, and cook to 165°. Remove from skillet and keep warm.
  • 3.Add peppers and onion to skillet; season with salt and pepper. Cook about 5 minutes or until vegetables start to brown.
  • 4.Add Italian seasoning and garlic; cook 2 minutes.
  • 5.Add tomatoes, tomato paste and chili flakes. Simmer about 10 minutes or until sauce thickens.
  • 6.In large saucepan over medium heat, bring polenta, water and one-half teaspoon salt to a boil, stirring constantly until polenta thickens.
  • 7.Cook about 5 minutes more, stirring occasionally.
  • 8.Transfer polenta to serving bowl or individual bowls, top with pepper sauce and sausages.
  • 9.Garnish with Parmesan cheese and/or chopped parsley, if desired.
  • Note: For food safety, cook turkey to a minimum internal temperature of 165° as measured by a meat thermometer.

1 pkg turkey sausage, sweet italian style
4 bell peppers, red, yellow, green or orange. sliced 1/8 in thick, then cut into half
1 large sweet onion, sliced 1/8 thick then cut into half
1-28 oz can(s) italian crushed tomatoes
3 Tbsp italian seasoning
1/2 Tbsp red pepper flakes
salt and pepper
fat free, non stick canola spray
brown rice, cooked
side salad w/ low fat dressing

Steps:

  • 1. Take a large non-stick skillet pan and coat with non-stick spray. Turn heat to medium setting. Put whole sausages in the skillet until browned on all sides. Remove and set aside. Drain pan.
  • 2. Spray pan generously with non-stick spray and place onions in pan with salt and pepper to taste. Sauté on medium heat for 5 minutes. Place pepper slices in pan with onions and sauté for 5 more minutes.
  • 3. While peppers and onions are cooking, slice the sausage into 3/4 inch thick slices. Add the sausage slices to the pan with the onion and pepper mixture.
  • 4. Then add the can of crushed tomatoes, the Italian seasonings and crushed red pepper flakes. Simmer over a low flame for 20 minutes. Serve the sausage and peppers over a cup of brown rice and a side green salad with a fat-free dressing.

1 package hot or sweet Italian turkey sausage (8-10 links)
4 (or more) Peppers (mixed colors - orange, red yellow and green) bit size
3 (or more) Vidalia onions, bit size
4 cloves roasted garlic pressed/mashed or smooched
One 8oz can diced tomatoes
One 24oz jar or your favorite tomato sauce
1 teaspoon Oregano
1 teaspoon Garlic Powder
1 teaspoon Garlic Salt
1 teaspoon Red Pepper Flakes (optional)
Salt - to taste
Pepper - to taste
½ teaspoon sugar
¼ cup grated Romano cheese
¼ cup grated parmesan cheese

Steps:

  • Pre-heat oven 350 degrees Place sausage in a large roasting pan. Drizzle olive oil over and bake 2 hours turning occasionally. If you are using pork sausage omit the olive oil. Chop peppers and onions while sausage cooks. Remove sausage from pan and place in the fridge. Place peppers, onions, garlic (roasted, powder & salt) oregano and then salt & pepper to taste. Stir then roast for 2 hours stirring every 30 minutes or so until onions are translucent. Now slice the sausage into bit sizes and add to veggies. Add can of diced tomatoes. Roast 60 minutes stirring occasionally. Place into a large pot with lid (or crock pot) add the jar of tomato sauce and sugar simmer for 30 minutes or longer. Let cool, the put into the fridge overnight. Day 2 Bring to a simmer on low add both cheeses stir and simmer for 60+ The longer you cook this the better it gets. Serve with Garlic Bread or over pasta
