Turkey Noodle Soup with Tomatoes image

Categories     Soup/Stew     Pasta     Tomato     turkey     Lunch     Fall     Gourmet     Dairy Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes about 12 cups, serving 8

Number Of Ingredients 9

the carcass of 1 turkey, broken into large pieces
2 ribs of celery, chopped coarse
3 carrots, chopped coarse
3 garlic cloves
2 small onions, quartered
1 teaspoon black peppercorns
a 28-ounce can plum tomatoes, chopped coarse and drained well in a colander
6 ounces wide egg noodles
1/4 cup finely chopped fresh parsley leaves

Steps:

  • In a large kettle or stockpot combine the carcass, the celery, the carrots, the garlic, the onions, the peppercorns, and enough water to cover the mixture by 2 inches (about 6 quarts) and simmer the mixture, uncovered, for 3 hours. Strain the stock through a large sieve into a large bowl, leaving the solids in the sieve, return the stock to the kettle, and boil it until it is reduced to about 10 cups.
  • When the solids in the sieve are cool enough to handle, remove any turkey meat from the carcass and add it to the stock with the carrots, crushed lightly, discarding the remaining solids. Add the tomatoes and bring the soup to a boil. Stir in the noodles, boil the soup, stirring occasionally, for 8 to 10 minutes, or until the noodles are tender, and stir in the parsley and salt and ground black pepper to taste. The soup may be made in advance, cooled completely, uncovered, and kept covered and chilled for 2 days or covered and frozen for 2 months.

Tips and Tricks:

  • Choose the Right Turkey: Select a fresh or frozen whole turkey or turkey breast that is free of bruises and has a plump appearance. If using a frozen turkey, thaw it in the refrigerator for several days before cooking.
  • Enhance the Flavor: Before cooking the turkey, season it with a flavorful blend of herbs, spices, and aromatics. You can use a store-bought seasoning mix or create your own using ingredients like thyme, rosemary, sage, paprika, garlic, and onion. You can also add vegetables like carrots, celery, and onions to the roasting pan to infuse the turkey with additional flavor.
  • Proper Cooking Techniques: Roast the turkey at the correct temperature and for the appropriate amount of time to ensure it is cooked thoroughly without drying out. Use a meat thermometer to check the internal temperature of the turkey, which should reach 165°F (74°C) in the thickest part of the breast and 180°F (82°C) in the thigh. Let the turkey rest for at least 15 minutes before carving to allow the juices to redistribute.
  • Make a Rich Broth: To make a flavorful broth for the soup, use the turkey carcass and leftover bones. Simmer them in water with aromatics like carrots, celery, onions, garlic, and herbs. You can also add vegetables like potatoes, turnips, and parsnips for extra flavor and texture.
  • Add Noodles and Vegetables: Cook egg noodles according to the package instructions and add them to the soup along with a variety of vegetables. Common choices include carrots, celery, onions, peas, corn, and green beans. You can also add leafy greens like kale or spinach for a nutritious boost.
  • Season and Garnish: Season the soup to taste with salt, pepper, and additional herbs and spices if desired. For a creamy texture, consider adding a dollop of sour cream or yogurt. Garnish the soup with fresh herbs like parsley, chives, or dill before serving.

Conclusion:

Turkey soup with egg noodles and vegetables is a hearty, comforting, and flavorful dish that is perfect for a cold winter day. By following the tips and tricks outlined above, you can create a delicious and satisfying soup that the whole family will enjoy. Experiment with different combinations of herbs, spices, and vegetables to find your perfect recipe. Leftover turkey soup can be stored in the refrigerator for several days or frozen for up to three months, making it a convenient and versatile meal option.
