1 pound ground turkey
1 white onion, chopped

1 ½ teaspoons ground thyme

1 cup water
⅓ cup white rice
¼ cup sweet barbeque sauce
1 cup crumbled feta cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Arrange the bell peppers in a casserole dish with the cavities facing upwards.
  • Heat the olive oil in a skillet over medium heat; cook the turkey in the hot oil until completely browned, about 5 minutes. Stir the onion into the turkey; season with salt and pepper. 1 onion, chopped
2 garlic cloves, minced
1 jalapeno pepper, chopped

1 lb ground turkey
2 tablespoons chili powder (if you don't want it quite as spicy use only 1 tablespoon)

1 cup cooked brown rice

1 cup frozen corn kernels, thawed

1 can black beans, drained and rinsed
1 can yellow corn, drained and rinsed
1 jar salsa

½ teaspoon black pepper
guacamole, to taste

Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a sharp knife, cut off the tops of each bell pepper. Use the knife to help cut out and remove the seeds and ribs from inside the peppers.
  • Place the peppers in a lightly greased roasting pan and set aside.
