1 (3 pound) red cabbage
2 tablespoons vegetable oil
1 onion, chopped
3 medium-sized tart cooking apples, peeled, cored and cut into 1/8-inch-thick wedges
5 cups boiling water
2/3 cup red wine vinegar
2 teaspoons salt
2 tablespoons sugar

Steps:

  • Wash the head of cabbage under cold running water, remove the tough outer leaves, and cut cabbage into quarters. To shred the cabbage, cut out the core and slice the quarters crosswise into 1/8?inch-wide strips.
  • In a heavy 4 to 5-quart casserole, heat the oil over moderate heat. Add chopped onions and cook, stirring frequently for 5 minutes, or until the onions are lightly browned. Add the cabbage, stir thoroughly, add the apples, and pour in the boiling water. Bring to a boil over high heat, stirring occasionally, and reduce the heat to very low. Add red wine vinegar, salt and sugar, stir to combine. Cover and simmer for 1 1/2 to 2 hours, or until the cabbage is tender. Check from time to time to make sure that the cabbage is moist and tender. If it seems dry, add a tablespoon of boiling water. When the cabbage is done, there should be almost no liquid left in the casserole. Taste for seasoning, then transfer the entire contents of the casserole to a heated platter or bowl and serve.

½ cup thick-cut bacon, diced
½ cup diced onion
2 cups chicken broth
½ cup red wine, or to taste
1 large apple, peeled and sliced
2 tablespoons apple cider vinegar, or to taste
2 teaspoons white sugar, or to taste
4 whole cloves
3 bay leaves
¼ teaspoon ground nutmeg, or to taste
1 pinch ground cinnamon, or to taste
salt and ground pepper to taste
2 ¼ pounds shredded red cabbage

Steps:

1 head red cabbage, about 2 pounds
2 tablespoons butter
1 onion, sliced
2 Granny Smith Apples, cored, peeled and sliced
1 tablespoon chopped dill, plus more for garnish
2 bay leaves
1/2 cup chicken broth, low sodium
1/3 cup cider vinegar
2 tablespoons sugar
Salt and pepper, to taste

Steps:

  • Quarter the cabbage and cut away the core, then cut the quarters into thirds. Rinse in cold water and set aside. In a large stockpot, melt butter over medium heat. Saute the onion and apples for 2 minutes until they begin to soften. Add the chopped dill, bay leaves, cabbage, and broth. Cook for 5 minutes until it begins to wilt. 1 medium head of red cabbage, about 2 pounds, cored and shredded
2 apples, preferably Cortland or Golden Delicious, peeled, cored, and cut into chunks
1/4 cup black or red currant jelly or red wine, optional

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. If you do not have any bacon fat handy, then use all oil, or oil with a few tablespoons of butter. Please, use only Granny Smith apples for this recipe, they hold up better than any other kind. This is a delicious side dish for beef!
