1 cup semisweet chocolate chips
1 unbaked 9-inch pie shell
4 eggs, beaten
1/2 cup sugar
1/2 cup light brown sugar
1/2 cup corn syrup
1/2 teaspoon vanilla
Pinch salt
1 cup granulated sugar
1/4 cup water
1 cup heavy cream

Steps:

  • Preheat the oven to 375 degrees F. Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell. In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake for about 1 hour or until the filling sets. Cool for 30 minutes before slicing. 1/8 teaspoon salt
3 ounces cold cream cheese, cubed
1/4 cup cold butter, cubed
2 to 3 tablespoons ice water
FILLING:
1/3 cup sugar
3 tablespoons butter
2 cups coarsely chopped semisweet chocolate, divided
4 large eggs
1 cup dark corn syrup
2 teaspoons vanilla extract
Dash salt
2-1/2 cups pecan halves, toasted

Steps:

  • In a small bowl, mix flour and salt; cut in cream cheese and butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic. Refrigerate 30 minutes or overnight., Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. Refrigerate while making filling., In a small saucepan, combine sugar, butter and 1 cup chopped chocolate; stir over low heat until smooth. ⅛ teaspoon salt
½ cup butter, chilled and diced
5 tablespoons ice water
3 eggs
¾ cup white sugar
¾ cup light corn syrup
¼ cup butter, melted
½ cup semisweet chocolate chips
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Crust: In a medium bowl combine flour and salt. Stir well, then cut in butter until mixture is the size of small peas. Add ice water and mix just until dough forms a ball.

1 cup light corn syrup

1 tablespoon dry buttermilk (optional)
1/4 teaspoon salt
1/4 teaspoon baking powder
3 tablespoons vegetable shortening
5 tablespoons cold butter
1 teaspoon white vinegar (or cider vinegar)
3 -4 tablespoons ice water
2 large eggs, room temperature
1 cup sugar
1/4 teaspoon salt
1/2 cup king arthur unbleached all-purpose flour
1/2 cup butter, melted and cooled
2 teaspoons vanilla extract (see NOTE* in directions)
1 1/3 cups bittersweet chocolate (or semisweet chocolate chips or chunks, or a combination)
2/3 cup diced pecans (toasted in a 350 F oven till golden, 8 to 10 minutes)
2/3 cup pecan halves (optional)

Steps:

  • To make the crust: Whisk together the flour, buttermilk powder, salt, and baking powder.

  • Give it another three-fold, then fold it in half to make a thick square.
  • Wrap in plastic, and refrigerate for 30 minutes, or for up to 24 hours.
  • Remove the dough from the fridge, and allow it to warm for about 15 minutes before rolling.
  • While it's warming, preheat the oven to 375°F
  • Roll the dough into a 12" to 13" circle.
  • Transfer the crust to a 9" pie plate.
  • Trim the edges (patching any bare spots, if necessary), and make a tall crimp.

1/4 cup vegetable shortening, cold, cut into two pieces
2 tablespoons vodka, cold
2 tablespoons cold water
3 tablespoons unsalted butter, cut into 1-inch pieces
3/4 cup dark brown sugar
1/2 teaspoon table salt
2 large eggs
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 cup whole pecans, toasted and chopped into small pieces (4 ounces)
2 ounces white chocolate, chopped into 1/4-inch pieces
2 ounces milk chocolate, chopped into 1/4-inch pieces
2 ounces semisweet chocolate, chopped into 1/4-inch pieces

  • For The Pie Dough: In the bowl of a food processor fitted with the metal blade, process 3/4 cup flour, salt, and sugar until combined, about two 1-second pulses.
