Steps:
- Roughly peel all the apples and core them. Slice the apples about 1 cm thick.
- Add the apples to a saucepan with 1/4 cup water. Add the cloves and the cinnamon stick. Cover and let it simmer on a low flame for 15-20 minutes.
- Add a bit more water if it starts drying out. Conversely, cook them uncovered if there's too much water.
- What you're looking for at the end are well softened apples with very little liquid.
- Once the apples are cooked, remove the cinnamon stick and cloves. Either purée the apples in a food processor or mash them with a potato masher. I used the food processor.
- This apple sauce can be used in various low calorie baking recipes :).

Steps:
- core apples.
- you may peel them if you'd like, i personally like the skins on.
- dice into bite-sizeish pieces.
- add enough water to cover about half the apples (you can always add more, but once it starts cooking it's hard to remove it, so err on the side of too little).
- add cinnamon and cloves.
- cook on high until the apples start to mush down.
- turn to low and let simmer until it seems done.
- don't forget to sample liberally.
Tips:
- Choose the right apples: Use a variety of apples that are tart and sweet, such as Granny Smith, Honeycrisp, or Pink Lady. This will give your applesauce a well-rounded flavor.
- Peel and core the apples: This will help to remove any unwanted skin or seeds from the applesauce.
- Use a food processor or blender: This will help to quickly and easily puree the apples.
- Add spices and flavorings: You can add a variety of spices and flavorings to your applesauce, such as cinnamon, nutmeg, ginger, or vanilla extract. This will help to enhance the flavor of the applesauce.
- Simmer the applesauce: Simmering the applesauce will help to thicken it and develop the flavors.
- Let the applesauce cool: Once the applesauce is cooked, let it cool slightly before serving. This will help to prevent it from being too hot.
