Tips:

  • Choose high-quality ingredients: Use fresh, flavorful ingredients to ensure the best possible dish. Look for high-quality veal, wild mushrooms, and red wine.
  • Brown the veal well: Searing the veal gives it a delicious browned crust and helps to develop its flavor. Be sure to brown the veal in a hot skillet until it is golden brown on all sides.
  • Use a variety of wild mushrooms: Different types of wild mushrooms have different flavors and textures, so using a variety will add complexity to your dish. Some good choices include chanterelles, morels, and shiitake mushrooms.
  • Use a good quality red wine: The red wine you use in this dish should be one that you would enjoy drinking. A full-bodied red wine, such as a Cabernet Sauvignon or a Merlot, will add richness and depth of flavor to the sauce.
  • Simmer the sauce until it is reduced: Simmering the sauce allows the flavors to meld and develop. Be patient and let the sauce simmer for at least 30 minutes, or until it has reduced by about half.
  • Serve the dish over mashed potatoes or polenta: Mashed potatoes or polenta are a great way to soak up the delicious sauce. You could also serve the dish over rice or pasta.
