VEGAN APPLE STREUSEL MUFFINS

I found the original recipe in The Garden of Vegan cookbook, but I've had to make quite a few modifications to suit my temper-mental oven, our high altitude, and my tastes. My daughter loves them and requests them weekly. We think it's the perfect not-too-sweet breakfast muffin. They are quite moist, and are best eaten within a day of making.

Time 25m

Yield 12 muffins

Number Of Ingredients 13

2 tablespoons granulated sugar
1/4 teaspoon cinnamon
1 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup ground flax seeds
1/2 cup granulated sugar
1 1/2 tablespoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 apple, finely chopped (I usually use Gala, and leave the skin on)
1 cup water
1/4 cup olive oil
1 (111 g) unsweetened applesauce

Steps:

  • Preheat oven to 400°F.
  • In a small bowl stir together the first portion of cinnamon and sugar; set aside.
  • Mix the dry ingredients together in a large bowl. Make a well in the centre and dump in the wet ingredients and chopped apples. Stir until just mixed.
  • Spoon into lightly oiled muffin pan, and sprinkle with the reserved cinnamon sugar.
  • Bake for about 15 minutes, or until a toothpick inserted in the centre comes out clean.

Time 35m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 13

2 tablespoons soy margarine, firm stick
1/4 cup all-purpose flour
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
1 cup rice milk
1/4 cup safflower oil
1/2 teaspoon vanilla
1/4 cup unsweetened applesauce
1 cup shredded apple
2 cups whole wheat flour
1/3 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400. Line muffin pan with 12 baking cups.
  • Prepare Streusel Topping by cutting margarine into flour, brown sugar and cinnamon in a medium bowl using a pastry blender or crisscrossing two knives until crumbly. Set aside.
  • Beat rice milk, oil, vanilla and applesauce in large bowl. Stir in shredded apple.
  • Stir in flour, sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy).
  • Divide batter evenly among muffin cups. Sprinkle each with about 2 tsps of Streusel Topping.
  • Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to wire rack.

Tips:

  • Use ripe apples: Using ripe apples will give your muffins a sweeter, more flavorful taste. If you don't have any ripe apples on hand, you can always peel and dice some green apples and toss them with a little bit of sugar and cinnamon.
  • Don't overmix the batter: Overmixing the batter will make your muffins tough. Mix just until the ingredients are combined.
  • Use a muffin pan with a non-stick coating: This will help prevent the muffins from sticking to the pan and make them easier to remove.
  • Fill the muffin cups about 2/3 full: This will allow the muffins to rise properly without overflowing.
  • Bake the muffins at 375 degrees Fahrenheit for 20-25 minutes: Keep an eye on the muffins while they're baking, and remove them from the oven when a toothpick inserted into the center comes out clean.

Conclusion:

These vegan apple streusel muffins are a delicious and easy-to-make breakfast or snack. They're perfect for busy mornings or for packing in lunches. With their sweet and cinnamony flavor, these muffins are sure to be a hit with everyone who tries them. So next time you're looking for a vegan muffin recipe, give these apple streusel muffins a try. You won't be disappointed!
