When you love tots and you love nachos and you need a vegan recipe for totchos! Optional toppings include fresh or canned green chiles or jalapenos, sliced green onions, fresh cilantro, and/or hot sauce.

olive oil cooking spray
1 (12 ounce) package vegan beef crumbles (such as Trader Joe's Beef-less Ground Beef®)
1 cup mild green salsa, or to taste
1 (6 ounce) can sliced black olives, drained
1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
1 (8 ounce) package shredded vegan cheese (such as Daiya®)
1 cup vegan sour cream (such as Tofutti®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Spray a skillet with cooking spray and add vegan crumbles. Cook and stir over medium heat until heated through and uniformly broken up, about 5 minutes. Stir in salsa and black olives. Remove from heat and cover to keep warm.
  • Spread taters on a baking sheet in a single layer.
  • Bake in the preheated oven for 10 minutes. Turn taters over; bake until crispy, about 10 minutes more.
  • Transfer taters to a shallow, oven-safe serving dish. Spread crumbles-salsa mixture evenly on top. Sprinkle vegan cheese on top.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place baking dish in the oven. Broil, watching closely to prevent burning, until vegan cheese is melted, about 3 minutes.
  • Top with dollops of vegan sour cream.

2 lb frozen tater tots
1 lb ground beef
1 ½ tablespoons Frank's Red Hot Original
1 teaspoon ground cumin
1 teaspoon garlic
1 teaspoon paprika
1 teaspoon chili powder
2 teaspoons salt
4 cups shredded mexican cheese blend
red onion, diced
fresh scallion, sliced
diced tomato
sour cream
guacamole

Steps:

  • Preheat oven to 425ºF (220°C).
  • Spread tater tots out on a sheet tray. Bake for 20 minutes. Remove from oven and set aside.
  • Heat a medium skillet over medium heat. Add ground beef, Frank's Red Hot Original, cumin, garlic powder, paprika, chili powder, and salt. Gradually break up beef with a spatula and sauté until beef is fully cooked, about 5 minutes. Remove from heat.
  • Place an even layer of tater tots in an 8-inch oven-safe skillet. Top with half of the beef. Sprinkle a layer of cheese. Repeat layering of tater tots, beef, and cheese.
  • Lower oven temperature to 375ºF (160°C). Place skillet in oven and bake for 5-7 minutes, until cheese is melted.
  • Remove from oven and top with red onion, scallions, and tomatoes. Add a dollop of sour cream and guacamole to the center of the skillet. Serve immediately.

1 (32 ounce) package frozen tater tots
8 ounces lean ground turkey
½ cup salsa
2 teaspoons Mexican seasoning blend
1 ½ cups shredded reduced-fat Mexican cheese blend
½ cup diced tomatoes
⅓ cup diced bell pepper
⅓ cup sliced ripe olives
½ cup sliced green onions
Light sour cream
Guacamole
Salsa
Chopped fresh cilantro

Steps:

  • Preheat oven to 425 degrees F. Place tater tots in a single layer on a large baking sheet and cook for 30 minutes or until browned and very crisp, stirring once halfway through cooking.
  • While tater tots are cooking, cook ground turkey in a large skillet over medium heat until cooked through. Stir in salsa and seasoning and cook for a few minutes more.
  • Mound tater tots slightly on the baking sheet and sprinkle with half the cheese; top with turkey mixture. Sprinkle with remaining cheese then top with tomatoes, bell pepper and olives.
  • Cook for 10 minutes more or until cheese is melted. Sprinkle with green onions and serve with any optional toppings desired.
