Yield Serves 6

Number Of Ingredients 11

1 tablespoon vegetable oil
1 large onion, chopped
4 large garlic cloves, chopped
1 tablespoon minced peeled fresh ginger
1 tablespoon cumin seeds, chopped, or 2 tablespoons ground cumin
1 teaspoon mustard seeds or 1/2 teaspoon dry mustard
1 pound lentils
6 cups water
6 plum tomatoes, chopped
3 zucchini, cut into 1-inch rounds
Chopped fresh cilantro

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, garlic and ginger and sauté until tender, about 10 minutes. Mix in cumin and mustard and stir 2 minutes. Add next 4 ingredients; bring to boil. Reduce heat to medium-low and simmer until lentils are tender, about 45 minutes or less (Can be prepared 3 days ahead. Cover and refrigerate. Bring to simmer over medium heat, adding more water as necessary to thin to desired consistency, before serving.)Top with cilantro.

Tips:

  • Choose the right lentils. Brown or green lentils hold their shape well and are ideal for stews. Red lentils break down more easily and create a thicker stew.
  • Rinse the lentils before cooking. This removes any dirt or debris and helps prevent the stew from becoming cloudy.
  • Sauté the vegetables before adding the lentils. This helps to enhance their flavor and create a more flavorful stew.
  • Use a variety of vegetables. This will give your stew more texture and flavor. Some good options include carrots, celery, onions, potatoes, and tomatoes.
  • Add spices and herbs to taste. Common spices used in lentil stews include cumin, coriander, turmeric, and garam masala. Fresh herbs such as cilantro, parsley, and thyme can also be added for extra flavor.
  • Simmer the stew until the lentils are tender. This can take anywhere from 20 to 40 minutes, depending on the type of lentils you are using.
  • Serve the stew with your favorite sides. Some good options include rice, naan, or yogurt.

Conclusion:

Vegetarian lentil stew is a hearty, flavorful, and nutritious meal that is perfect for a cold winter day. It is also a great way to use up leftover lentils.
