1 lb Velveeta pepper jack cheese, cut into 1/2-inch cubes (regular Velveeta may be used to tone down the spiciness)
1 (14 1/2 ounce) can ro*tel tomatoes and green chilies (mild or spicy)
1/4 lb browned chorizo sausage
1 cup diced broccoli, heated through but still crisp and green
1/4-1/2 cup salsa, of desired heat
1 -2 tablespoon hot sauce (optional)
1 dash garlic powder
1 sourdough loaf, hollowed out

  • Add choice of Velveeta to your slow cooker, place on low heat. Once it starts to melt, add the minimum of remaining ingredients. Allow at least 30 minutes for the flavors to mingle together before adding extras to suit your own tastes.
  • Prepare bread bowl shortly before serving--hollow out all but 1/2" of the interior bread (save the interior, cut the bread into cubes and serve WITH the dip). Fill bread bowl with dip, serve immediately with bread cubes, cut veggies, tortilla chips, pretzels, whatever you wish.
  • Note: My mother prepares this with spinach rather than broccoli, and my brother doesn't use either. It's all about your preferences.

When I had it, it had way more than the 1 tblsp of hot sauce in it than this recipe calls for, so you can add the hot sauce to taste.

1 roll of jimmy dean sausage
1 bag of tostitos or plain chips
NEVER LEFTOVERS

Steps:

  • 1. Brown Sausage and drain or spoon out grease.
  • 2. Cut Velveeta into cubes while sausage is cooking.
  • 3. Use a medium glass Pyrex dish. It doesn't burn any cheese. Plastic might. It keeps the heat too. Add all ingredients and microwave 3 minutes at the time and stir until all the cheese is melted.

1 large onion, chopped finely
2 Tbsp vinegar
1 Tbsp sugar
1 tsp salt and pepper
2 tsp paprika
1 tsp minced garlic
1 Tbsp worcestershire sauce
1 can(s) 6 or 8 oz diced tomatoes (spiced ones would be good)
1 small can green chilies
2 lb loaf of velveeta

Steps:

  • 1. Combine all ingredients (EXCEPT the Velveeta) in a medium size sauce pan. Simmer for 1-1/2 hours;
  • 2. Melt cheese in microwave (if on stove slowly on low) and mix with ingredients that you've had simmering.
  • 3. This an be kept warm in a warming pot or crock pot; if gets too thick you can thin it with beer.
  • 4. Can be served with corn chips or lil smokies.

Steps:

  • Melt the butter in a saucepan on medium-low heat, and then cook the onions and peppers for about five minutes or until onions are translucent.
  • Add the garlic and cook for another minute.
  • Whisk the flour into the butter, vegetable mix and cook for about 30 seconds.
  • Add the milk to the pot, and cook on medium, whisking constantly until sauce is thick, about five minutes. Stir in the cilantro and tomatoes.
  • Turn heat down to low, and a 1/4-cup at a time, slowly add the shredded cheese stirring into the white sauce until completely melted. Repeat.
  • Stir in the sour cream.
  • Add salt to taste.
  • Notes: You can vary which chiles you use to control how hot you want the queso to be. Also, if the sauce is too thick, feel free to add a bit more milk a tablespoon at a time. The key, however, to a smooth sauce is adding the cheese very slowly and not adding any more cheese until the previous addition is completely integrated into the sauce.
