Vinegar pickled carrots are a delicious and versatile side dish that can be enjoyed on their own or as part of a larger meal. They are also a great way to use up leftover carrots and make your own homemade pickles. Pickling is a process that preserves food by submerging it in a vinegar solution. This process not only extends the shelf life of the food, but it also gives it a unique flavor. Vinegar pickled carrots are typically made with a combination of vinegar, water, sugar, and spices. The carrots are then left to sit in the vinegar solution for a period of time, allowing the flavors to meld together. As the carrots pickle, they will gradually turn a light yellow or orange color.

Steps:
- Peel 1kg carrots and cut into sticks or slices. Boil in generously salted water for 2 mins until just starting to soften, then drain.
- To make the pickling vinegar, put the whole spices in a medium saucepan. Toast over a low heat until they begin to smell aromatic. Add the dried chilli flakes last, as these can easily catch. Add the bay, turmeric and garlic cloves, pour in all of the vinegar and sugar, let it dissolve, and bring to a simmer.
- Pack the carrots into the jars, adding 1 tsp coarse crystal sea salt to each, cover with the hot vinegar and seal. Ready to eat in 2 weeks, or longer, if you like.
