Number Of Ingredients 9

1 to 1 1/2 cups chopped watercress
1/4 cup cooked edamame
1/4 cup chopped cucumber
2 tablespoons chopped celery
1/4 avocado, chopped
1/4 cup chopped green apple
Fresh lemon juice, for drizzling
Extra-virgin olive oil, for drizzling
Kosher salt and freshly ground pepper

Tips:

  • Choose fresh, crisp watercress: Look for bunches with bright green leaves and no signs of wilting or yellowing.
  • Wash the watercress thoroughly: Rinse the watercress under cold water to remove any dirt or debris.
  • Dry the watercress thoroughly: Use a salad spinner or pat the watercress dry with paper towels to remove excess water.
  • Chop the watercress finely: This will help the watercress to distribute evenly throughout the salad.
  • Use a variety of ingredients: This will add flavor and texture to the salad. Some good options include cherry tomatoes, cucumber, red onion, avocado, and goat cheese.
  • Add a flavorful dressing: A simple vinaigrette or lemon-tahini dressing is a good option. You can also use a store-bought dressing, if you prefer.
  • Serve the salad immediately: Watercress salad is best enjoyed fresh. If you need to make it ahead of time, store the dressing and the salad separately and assemble just before serving.
