Time 20m

Yield 12 muffins

Number Of Ingredients 10

2/3 cup instant nonfat dry milk powder
2 teaspoons cinnamon
3 tablespoons sugar
6 tablespoons flour
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 cup canned pumpkin
1/2 cup carrot, grated
4 tablespoons raisins

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a medium mixing bowl.
  • Spray muffin tin with non-stick cooking spray-(DO NOT use paper liners).
  • .Divide batter evenly into 12 muffin cups.
  • Bake 15 minutes or until a toothpick put in center comes out clean.
  • Makes 12 muffins- 1.5 Points each.

Tips:

  • Use canned pumpkin. It's convenient and has a smooth, consistent texture. If you use fresh pumpkin, be sure to roast it first.
  • Don't overmix the batter. Overmixing can make the muffins tough. Just mix until the ingredients are combined.
  • Fill the muffin cups only about 2/3 full. This will prevent them from overflowing in the oven.
  • Bake the muffins until a toothpick inserted into the center comes out clean. This usually takes about 25 minutes.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help them to hold their shape.

Conclusion:

These Weight Watcher pumpkin muffins are a delicious and healthy way to satisfy your sweet tooth. They're perfect for breakfast, lunch, or a snack. And they're so easy to make, you'll be able to enjoy them anytime.
