HERBED-BAKED EGGS

Categories     main-dish

Time 12m

Yield 2 servings

Number Of Ingredients 10

1/4 teaspoon minced fresh garlic
1/4 teaspoon minced fresh thyme leaves
1/4 teaspoon minced fresh rosemary leaves
1 tablespoon minced fresh parsley
1 tablespoon freshly grated Parmesan
6 extra-large eggs
2 tablespoons heavy cream
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
Toasted French bread or brioche, for serving

Steps:

  • Preheat the broiler for 5 minutes and place the oven rack 6 inches below the heat.
  • Combine the garlic, thyme, rosemary, parsley, and Parmesan and set aside. Carefully crack 3 eggs into each of 2 small bowls or teacups (you won't be baking them in these) without breaking the yolks. (It's very important to have all the eggs ready to go before you start cooking.)
  • Place 2 individual gratin dishes on a baking sheet. Place 1 tablespoon of cream and 1/2 tablespoon of butter in each dish and place under the broiler for about 3 minutes, until hot and bubbly. Quickly, but carefully, pour 3 eggs into each gratin dish and sprinkle evenly with the herb mixture, then sprinkle liberally with salt and pepper. Place back under the broiler for 5 to 6 minutes, until the whites of the eggs are almost cooked. (Rotate the baking sheet once if they aren't cooking evenly.) The eggs will continue to cook after you take them out of the oven. Allow to set for 60 seconds and serve hot with toasted bread.

2 teaspoons butter, divided
⅓ cup sliced fresh mushrooms
¼ cup chopped green bell pepper
2 green onions, sliced on the bias
¼ cup cooked ham strips
salt and ground black pepper to taste
2 eggs

Steps:

Repeat until the top is set but still moist and soft, about 2 minutes.
  • Spread the filling over one side of the omelet. Fold the other half over the filling and slide omelet onto a plate.

3/4 cup grated Cheddar cheese

Nutrition Facts : Nutritional Facts Serves

Tips:

  • Use fresh herbs: Fresh herbs will give your eggs the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Don't overcook the eggs: Overcooked eggs will be tough and rubbery. Cook them just until the whites are set and the yolks are still slightly runny.
  • Use a non-stick skillet: A non-stick skillet will help prevent the eggs from sticking and breaking.
  • Season the eggs to taste: Salt and pepper are essential seasonings for eggs, but you can also add other spices, such as garlic powder, onion powder, or paprika.
  • Serve the eggs immediately: Eggs are best served immediately after they are cooked. If you need to keep them warm for a short time, you can place them in a warm oven.

Conclusion:

Western herb eggs are a delicious and easy-to-make breakfast, lunch, or dinner. They are a great way to use up fresh herbs and can be customized to your liking. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that the whole family will enjoy.
