White risotto from the Ticino is a Swiss dish that is made with rice, vegetables, and cheese. It is a popular dish in the Ticino region of Switzerland, which is located in the southern part of the country. The dish is typically made with a short-grain rice, such as Arborio or Carnaroli, and it is cooked in a broth or stock until it is creamy and tender. Vegetables such as onions, garlic, and mushrooms are often added to the risotto, and it is typically flavored with white wine and herbs. Cheese is then stirred into the risotto until it is melted and creamy. White risotto from the Ticino is a delicious and versatile dish that can be served as a main course or a side dish.

Steps:
- Warm the chicken stock in a medium saucepan over medium-low heat, cover and keep warm while you make the risotto.
- Heat the olive oil in another medium saucepan over medium heat until shimmering. Add the shallot, garlic, 1/2 teaspoon salt and about 10 grinds of black pepper and cook, stirring occasionally, until the vegetables are softened, 3 to 4 minutes. Add the bay leaves and 3 tablespoons butter, stirring until the butter has melted, about 1 minute.
- Add the rice and toast, stirring only once, until it smells nutty and starts to turn light golden brown, 3 to 4 minutes.
- Pour in the wine and simmer, stirring occasionally, until it has evaporated completely, 2 to 3 minutes.
- Ladle one cup of the warm stock into the rice and cook, stirring gently without stopping, until the rice has absorbed the liquid, 2 to 3 minutes (you will know it's time to add more stock when you move the rice aside and no liquid pools in the center).
- Repeat this process, adding more stock a ladleful at a time, until the rice is al dente, 17 to 19 minutes. Discard the bay leaves. (You may have a little stock left over. If so, refrigerate in an airtight container for up to 1 week.) If you prefer your risotto on the saucier side, add more stock 1/4 cup at a time until the desired consistency is reached.
- Stir in the Parmesan, the remaining 2 tablespoons butter, 1 teaspoon salt and a few more grinds of black pepper and serve with more Parmesan, if desired.

- Add the white wine and cook until the wine has evaporated, stirring occasionally.
- Add 1 cup (240 ml) of the hot stock and stir to combine. Cook, stirring frequently, until the stock is fully absorbed.

- Pour in the rice and stir with a wooden spoon over medium heat until all the rice is coated with the butter. Let it cook for three to four minutes, stirring frequently so that it absorbs the butter and turns opaque.

Steps:
- Melt half of the butter in a medium saucepan over low heat. Simmer the onion and beef marrow in the butter for about 10 minutes. When the onion is soft, remove the onion and marrow from the pan using a slotted spoon, and set aside. (I like to leave the onions in.)
- Saute the rice in the pan over medium heat for 5 to 7 minutes, or until lightly toasted. Stir constantly so the rice will not stick and burn. Stir in one ladle of beef stock, and keep stirring until it is mostly absorbed, ladling and stirring in more of the broth as well as the white wine in the same manner, until the rice is almost al dente. Stir in the saffron, remaining butter, and 3/4 cup of Parmesan cheese. Turn off the heat, cover and let sit for 4 or 5 minutes.
- Serve as a bed for ossibuchi or by itself with as much of the remaining Parmesan cheese sprinkled over as you like.

Tips:
- Use high-quality ingredients. The better the ingredients, the better the risotto will be.
- Toast the rice in butter or oil before adding the liquid. This will help to release the starch and create a creamy texture.
- Add the liquid gradually, stirring constantly. This will help to prevent the rice from sticking together.
- Let the risotto simmer for at least 18 minutes, or until the rice is tender but still has a slight bite to it.
- Stir in cheese, butter, and herbs at the end of cooking. This will add flavor and creaminess to the risotto.
- Serve the risotto immediately, while it is still hot and creamy.
Conclusion:
White risotto is a classic Italian dish that is simple to make and delicious to eat. With its creamy texture and rich flavor, it is a perfect meal for any occasion. Follow these tips to make the best white risotto at home.
