I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

WHOLE WHEAT AND FLAX WAFFLES

Whole Wheat and Flax Waffles image

The original recipe was made by my nana for years and years. Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

WHOLE WHEAT WAFFLES

Whole Wheat Waffles image

"Finding a homemade waffle recipe that's low in calories is difficult," relates Jessica Beare Edmunds of Kingsland, Georgia. "So I modified a recipe I had, substituting fat-free plain yogurt for the oil or margarine. For a little variety, I sometimes use a flavored yogurt instead of plain."

Provided by Taste of Home

Categories     Breakfast     Brunch

Time 35m

Yield 20 waffles (4-in. x 4-in.).

Number Of Ingredients 10

1/2 cup egg substitute
1-3/4 cups 1% milk
1/2 cup fat-free plain yogurt
1 tablespoon vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
Sugar substitute equivalent to 1/2 cup sugar
2 tablespoons sugar
4 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • In a large bowl, beat egg substitute until frothy. Stir in the milk, yogurt and vanilla. Combine the flours, sugar substitute, sugar, baking powder and salt; stir into milk mixture just until combined. Bake in a preheated waffle iron according to manufacturer's directions until golden brown.

Tips:

  • Use high-quality ingredients: Fresh, high-quality ingredients will make a big difference in the taste of your waffles. Look for organic or local eggs, milk, and butter. Use pure maple syrup or honey instead of processed pancake syrup.
  • Don't overmix the batter: Overmixing the batter will make the waffles tough. Mix the ingredients just until they are combined.
  • Let the batter rest: Letting the batter rest for a few minutes before cooking will allow the gluten to relax and will make the waffles lighter and fluffier.
  • Use a hot waffle iron: A hot waffle iron will help to create crispy waffles. Preheat the waffle iron according to the manufacturer's instructions.
  • Don't overcrowd the waffle iron: Overcrowding the waffle iron will make the waffles cook unevenly. Cook only as many waffles as the waffle iron can accommodate.
  • Serve the waffles immediately: Waffles are best served immediately after they are cooked. If you need to keep them warm, place them in a preheated oven set to 200 degrees Fahrenheit.

Conclusion:

Whole wheat waffles with flax are a healthy and delicious breakfast option. They are packed with nutrients and are a good source of fiber. These waffles are also easy to make and can be customized to your liking. Try adding different fruits, nuts, or spices to the batter for a unique and flavorful breakfast.
