2 1/4 cups spelt flour
1 tablespoon baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
3/4 cup seltzer water
1/4 cup oil

Steps:

  • Preheat your waffle iron.
  • Mix the dry ingredients on a large bowl. Then whisk in all the wet ingredient-until smooth.
  • Scoop the batter onto the waffle iron and close. Cook for 2-5 minutes, then repeat.

1 cup all-purpose flour
1 cup whole wheat flour
3 tablespoons ground flaxseed
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs, separated
2 cups fat-free milk
3 tablespoons canola oil
3 tablespoons unsweetened applesauce
Mixed fresh berries and confectioners' sugar, optional

Steps:

  • In a large bowl, combine the flours, flax, baking powder and salt. Combine the egg yolks, milk, oil and applesauce; stir into dry ingredients until just moistened., In a small bowl, beat egg whites until stiff peaks form; fold into batter., Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with berries and confectioners' sugar if desired., To freeze, arrange waffles in a single layer on sheet pans. Freeze overnight or until frozen. Transfer to a resealable plastic freezer bag. I had a basic oatmeal pancake recipe that I made-over into a whole new recipe....it's more wholesome and everyone that has tasted it thinks it's wonderful! Guaranteed to make you full! We love it with mixed berries on top to make it a healthy breakfast!

Number Of Ingredients 9

2 cups old fashioned oats or 2 cups quick oats
2 cups oat bran or 2 cups oat flour
2 cups soy flour (or combination of both) or 2 cups soy protein (or combination of both)
2 cups spelt flour or 2 cups whole wheat flour
2 cups non-fat powdered milk
1/2 cup Splenda sugar substitute
8 teaspoons baking powder
4 teaspoons salt
4 teaspoons baking soda

Steps:

  • mix together and store in tight container.
  • TO MAKE PANCAKES.
  • 1 1/4 C mix.
  • 1 C Water.
  • 2 T.
  • canola oil.
  • 1 egg.
  • mix together-- if you want it thicker add mix, if you want it thinner, add water.
  • I like to add some cinnamon to taste.
  • Spoon onto hot griddle and cook.
  • Note-- the batter tends to thicken as it sits.
  • TO MAKE WAFFLES.
  • 1 1/2 C mix.
  • 1 C water.
  • 2 T.
  • canola oil.
  • 1 T.
  • butter.
  • 1 egg.
  • separate egg and beat whites until thick.
  • Mix remaining ingredients and fold in whites.
  • Spoon into hot waffle maker.
  • Note-- batter may seem watery, but the waffles turn out wonderful!
  • Batter will thicken as it sits.
