A great icing that we used in Wilton Cake Decorating Class. Would produce amazing results everytime. Thinning is done easily by adding water. This recipe makes "stiff" consistency. To make "medium" add one tablespoon milk or water. To make "thin" icing (perfect consistency for decorating a cake with the basic coating) Add two tablespoons of milk or water. If you want pure white icing, which is the perfect base to tint, use the white crisco shortening and any clear vanilla extract (wilton makes a great one). Using any others will give a faint creamy color that may affect the shade you try and tint with. Using water will give you a stable product that needs no refridgeration and the icing will keep indefinately in the fridge if you keep it in a covered container. If it dries out in the fridge you can always just add a bit of water to bring it back to the consistency you need. If you over thin at any time, just add more icing sugar to thicken. Very versatile product!

Steps:

  • Cream butter and shortening together on medium speed until light and fluffy. This should take about 1 minute.
  • Add the vanilla, scraping down the sides of the bowl as needed.
  • Gradually add the confectioners' sugar, 1 cup at a time, then beat well. Scrape down the sides of the bowl as needed.

2 cups unsalted butter, room temperature (452g; 1 lb. box)
1 Tbsp vanilla extract or vanilla bean paste (12g)
1/2 tsp fine salt (3g)
7 cups powdered sugar (907g; 2 lb. bag)
3 Tbsp heavy cream or whipping cream (45g)

Steps:

  • Beat 2 cups of unsalted butter on a medium speed for 30 seconds until smooth with a paddle attachment / stand mixer or a hand mixer.
  • Mix in 1 Tbsp vanilla extract or vanilla bean paste and 1/2 tsp salt on a low speed.
  • Slowly add in 7 cups of powdered sugar while mixing slowly on the lowest setting. Half way through add in 3 Tbsp of heavy cream or milk to make it easier to mix. I like to place a kitchen towel over my mixer to contain any powdered sugar clouds.
  • Mix on low until the ingredients are fully incorporated and the desired consistency is reached.
  • If the frosting is too thick, add in additional cream (1 Tbsp at a time). If the frosting is too thin, add in more powdered sugar (quarter of a cup at a time).
  • If you plan to color the buttercream, add in the gel food coloring once the frosting is fully mixed and beat on low until it reach the desired colored.
  • To make the frosting extra smooth, stir it by hand with a rubber spatula for a minute or two right before you use it. It's an arm workout, but it's worth it! Push the frosting back and forth and spread it around the side of the bowl. This will push out any extra air and make it easier to smooth onto cakes or pipe with.

1 1/2 c. Salted Butter, Shortening, Or A Combination (I Recommend 1 Cup Butter And 1/2 Cup Shortening)
1 tsp. Vanilla Extract
2 lb. Powdered Sugar, Sifted
6 tbsp. To 8 Tablespoons Milk, As Needed

Steps:

  • Cream the butter/shortening until completely smooth. Beat in vanilla extract. (If using all shortening, add 1/4 teaspoon fine sea or kosher salt.)On low speed, add sifted sugar, about 1 cup at a time, alternating with 1 tablespoon of milk. Stop frequently to scrape down the sides and bottom of the bowl. After the last addition of the sugar, evaluate the consistency of the frosting before adding more milk. Beat for 2 more minutes, on medium-high speed if a very fluffy frosting is desired. The frosting should be thick and not fall off a spatula unless tapped on the side of the bowl. Adjust consistency by adding more milk or powdered sugar as needed. Use immediately, or press plastic wrap onto the icing and refrigerate. Before using from refrigeration, stir vigorously to a spreading consistency. Frosting may be tinted if desired.

1 pound unsalted butter, softened
1/4 teaspoon table salt
3 to 4 tablespoons skim milk
2 teaspoons quality vanilla extract
1 3/4 pounds powdered sugar (sift if there are any lumps)

Steps:

  • Beat the butter in a stand mixer until it is creamy and slaps the sides of the bowl. Scrape your bowl. Mix the salt with the milk, and then add 3 tablespoons of the milk along with the vanilla extract and blend slowly until combined. Raise the speed to medium and beat to form a smooth butter mixture.
  • Add half of the powdered sugar and blend on low until combined. Scrape the bowl, add the remaining sugar, set the mixer to low and blend for 2 to 3 minutes. Resist the urge to add more milk right away because the buttercream will thin out as it mixes. After mixing on low for 2 to 3 minutes you can choose to add more milk, 1 teaspoon at a time, to reach your desired consistency.
  • Scrape your bowl, then set the mixture to medium-low and mix for 10 minutes. You may scrape the bowl halfway through. The frosting can be made softer with the addition of milk, 1/2 teaspoon at a time. The frosting will keep for 3 days at room temp, or 2 weeks refrigerated.
  • Buttercream Variations:
  • Add 1/2 cup marshmallow creme to the finished buttercream.
  • Stir in a generous amount of chopped chocolate sandwich cookies for a delicious cookies-and-cream filling.
  • Add up to 1/2 cup of creamy peanut butter to the finished buttercream.
  • Add 2 to 3 ounces of melted and cooled bittersweet baking chocolate to the finished buttercream.
  • Dissolve 2 to 4 teaspoons of instant espresso powder into your vanilla extract for coffee buttercream. This also works with the melted chocolate for mocha buttercream.
  • Eliminate the vanilla extract and add up to 2 teaspoons of peppermint, lemon, orange, coconut or almond extract. You may choose to add a few drops of vanilla just to round off the flavor.
