2 ears fresh sweet corn, husks and silks removed
4 -5 large garlic cloves, peeled
1 small onion, about 2 ounces, peeled, trimmed, and quartered
1 small jalapeno pepper, trimmed and seeded
2 tablespoons corn oil
2 corn tortillas, cut into 1-inch squares
2 large ripe tomatoes, about 1 pound total weight, peeled, seeded, and coarsely chopped
2 tablespoons tomato paste
2 teaspoons ground cumin
2 quarts good quality canned chicken broth, heated
salt
fresh ground black pepper
2 corn tortillas
1 ripe avocado
1 large boneless skinless chicken breast, cooked
1/2 cup shredded cheddar cheese or 1/2 cup crumbled Cotija cheese
1/2 cup sour cream or 1/2 cup Mexican crema
1/4 cup chopped fresh cilantro leaves

Steps:

  • Using a large, sharp knife, and holding an ear of corn at an angle with one end resting securely on a cutting board, carefully cut down along the cob to remove the kernels. Repeat with the other ear of corn. Set the kernels in the bowl of a food processor fitted with the stainless-steel blade; reserve the cobs.
  • Add the garlic cloves, onion, and jalapeno to the processor. Pulse the machine on and off until the mixture is coarsely chopped, stopping once or twice to scrape down the side of the bowl with a rubber spatula. Set the mixture aside.
  • In a large stockpot, heat the oil over medium heat. Add the corn tortilla squares, reduce the heat slightly, and cook, stirring occasionally, until they are slightly crisp and beginning to turn golden, 3 to 5 minutes. Stir in the corn mixture and sauté, stirring, just until it's thoroughly coated with the oil but not yet browned.
  • Add the tomatoes, tomato paste, and cumin and continue to sauté for about 10 minutes. Stir in the chicken broth and add the corn cobs; raise the heat to high, bring the liquid to a boil, and then reduce the heat and simmer briskly until the liquid has reduced by about a third, about 30 minutes.
  • While the soup is simmering, prepare the garnishes: Preheat the oven or toaster oven to 350 degrees. Cut the tortillas into thin strips and arrange on a small baking tray. Bake until the strips are crisp, 10 to 15 minutes. Peel and dice the avocado. Cut the chicken into thin strips.
  • With a slotted spoon, remove the corn cobs from the pot and discard them. Working in batches to avoid overfilling and splattering, puree the soup in a blender or food processor. Return the puree to a clean pot. Season to taste with salt and pepper.
  • To serve, add the chicken and avocado to the soup and reheat over low heat. Ladle the soup into 6 to 8 heated soup bowls and garnish with the baked tortilla strips, cheese, sour cream, and chopped cilantro. Serve immediately. Alternately, you can serve the garnishes in bowls at the table allowing everyone to serve themselves.

2 ears fresh corn, husks removed
4 or 5 large garlic cloves, peeled
1 small onion (about 3 ounces), peeled, trimmed, and quartered
1 small jalapeno pepper, trimmed and seeded
2 tablespoons corn oil
2 corn tortillas, cut into 1-inch squares
2 large ripe tomatoes (1 pound), peeled, seeded, and coarsely chopped
2 tablespoons tomato paste
2 to 3 teaspoons ground cumin
2 quarts chicken stock
Kosher salt and freshly ground black pepper
2 corn tortillas
1 ripe avocado
1 large chicken breast, cooked, boned, and skinned
1/2 cup grated Cheddar
1/4 cup chopped fresh cilantro leaves

Steps:

  • Using a large knife, carefully scrape the kernels off the corncobs and set aside, reserving the cobs.
  • Using a food processor fitted with the steel blade, or a large knife, coarsely chop the garlic, onion, jalapeno pepper, and corn kernels. Reserve.
  • In a large soup pot, heat the oil. Add the squares of tortillas and cook over low heat until they are slightly crisp. Stir in the chopped vegetables and simmer just until the vegetables are coated with the oil. Do not brown.
  • Add the tomatoes, the tomato paste, and 2 teaspoons of the cumin and continue to simmer for about 10 minutes to maximize the flavor. Slowly pour in the stock, add the corncobs, and cook over low heat until the soup is reduced by one third.
  • Discard the corn cobs and puree the soup, in batches, in a blender or food processor until smooth. At this point, the soup can be passed through the fine strainer, if desired. Return to a clean pot and season with salt, pepper, and additional cumin to taste.
  • Prepare the garnish: Preheat the oven or toaster oven to 350 degrees F. Cut the tortillas into thin strips and arrange on a small baking tray. Bake until the strips are crisp, 10 to 15 minutes. Peel and dice the avocado. Cut the chicken into thin strips.
  • To serve, add the chicken and avocado to the soup and reheat over low heat. Ladle the soup into 6 to 8 warm soup bowls and garnish with the baked tortilla strips, Cheddar cheese, and chopped cilantro. Serve immediately.

I found some tarragon recipes on here but this goat cheese recipe has to take the cake! I don't think I would've ever consider myself a goat cheese person but you can't deny how good this recipe is! I think Wolfgang Puck's recipe is one of the best tasting recipes I have ever made! Also, the sauce directions may seem lengthy but it was easily done while the chicken was cooking.

4 large boneless skinless chicken breast halves
4 ounces fresh goat cheese
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh Italian parsley
1 tablespoon chopped fresh chervil (I used curly leafed Parsley)
fresh ground white pepper
salt
4 teaspoons extra virgin olive oil
1 minced shallot
1 cup good california Chardonnay wine
1 cup chicken stock
1/2 cup heavy cream
4 tablespoons unsalted butter

Steps:

  • Preheat the oven to 450°F or heat a grill until hot.
  • In a bowl, mix the goat cheese, half the herbs and white pepper to taste.
  • Either loosen the skin of the chicken breasts or (if you use skinless breasts like I did) horizontally slice a thin layer of meat on the top of the breast almost all the way so that there is a flap.
  • Take your cheese mix and put some under the skin or flap of each breast and pat it down to spread the mixture out.
  • Season the chicken lightly with salt and pepper and sprinkle with extra virgin olive oil.
  • Roast in the oven for 15 to 20 minutes total or cook on the grill for 10 to 12 minutes per side.
  • While the chicken is cooking, put the shallot and chardonnay in a saucepan, raise to a boil and cook until the mixture is reduce to a glaze, about 1/4 cup total.
  • Add the stock and reduce again, but by half.
  • Add the cream and continue to cook until the sauce lightly coats the back of a spoon. Note that it is a sauce and will probably still be thin in consistency.
  • Finally, add the butter in pieces to the saucepan, thoroughly melting before adding the next piece.
  • Add salt and pepper to taste.
  • Strain into a clean saucepan and add the remaining chopped herbs.
  • Pour the sauce onto dinner plates and place sliced chicken breasts on top. Enjoy!

We've streamlined the original recipe, using chicken legs as the base of the stock, pulling off the meat when it's tender, and adding couple of beef bones to give the broth extra depth. Laila Santana, whose mother, Dalila Garcia, owns the Rose Garden, told us the recipe lends itself to improvisation. That it does, so feel free to tweak it to your tastes.

2 1/2 pounds bone-in chicken thighs or legs
1 pound beef bones, or a cut of beef with a lot of bone in it like short ribs, optional
1 medium onion, quartered leave the skin on
1 head garlic, halved across the equator leave the skin on
1/4 cup vegetable oil, or more as needed
6 corn tortillas
Salt
2 tablespoons canned chipotle chilies in adobo, or to taste
1/2 cup chopped fresh cilantro
2 avocados, pitted, peeled and cubed
4 to 8 ounces plain melting cheese, like mozzarella not fresh, Oaxaca or Jack, shredded or cubed
Lime wedges for serving, optional

Steps:

  • Put the chicken, the beef bones if you're using them, 3 of the onion quarters and the garlic in a large pot. Add water just to cover (about 10 cups) and bring to a boil. Reduce the heat so the liquid bubbles gently. Cook, skimming the foam off the surface every now and then, until the chicken is very tender, 45 minutes to 1 hour.
  • Meanwhile, put the vegetable oil in a large skillet over medium heat. When the oil is hot but not smoking, fry 2 of the tortillas (one at a time if necessary), turning once, until crisp and golden, 2 to 3 minutes per tortilla. Drain on paper towels. Cut the 4 remaining tortillas into strips, add them to the skillet and fry, stirring to separate them, until crisp and golden, another 2 to 3 minutes. Drain on paper towels and sprinkle with salt while they're still warm.
  • When the chicken is tender, transfer it to a plate or cutting board with tongs or a slotted spoon (or put it in the fridge or freezer so it cools faster). When it's cool enough to handle, shred the meat with your fingers, discarding the bones and the skin. (If you used beef, discard it or save it for another use.)
  • While the chicken is cooling, strain the stock and discard the solids. Peel the remaining quarter of an onion and put it in a blender with the chipotle, 1/4 cup of the cilantro and a sprinkle of salt. Crumble in the two whole fried tortillas and add enough stock to fill the blender a little more than halfway. Purée until the mixture is as smooth as possible.
  • Pour the purée and remaining stock back into the pot and bring to a boil. Reduce the heat so the mixture bubbles gently and cook for 5 to 10 minutes. Stir in the shredded chicken, taste and add more salt if necessary. Divide the avocados, the cheese and the remaining 1/4 cup cilantro among 4 to 6 bowls. Ladle the soup into the bowls and garnish with the fried tortilla strips. Serve immediately with lime wedges if you like.

4 tablespoons all-purpose flour, plus more for dusting
2 cups chicken broth, good-quality
salt, to taste
freshly ground black pepper, to taste
1 pinch cayenne pepper, optional, to taste
2 tablespoons heavy cream, plus more for egg wash
2 lb cooked boneless, skinless chicken, shredded
½ lb carrot, peeled, cut into 1/2-inch (1cm) pieces
½ lb red-skinned potato, cut into 1/2-inch (1cm) pieces
½ cup frozen peas, or shelled fresh peas
½ lb puff pastry, defrosted following package instructions
1 black truffle, optional, to taste
1 large egg

Steps:

  • Melt the butter in a large, deep saucepan.
  • Add the flour and whisk to ensure there are no lumps before adding the chicken stock. Cook for 5-10 minutes while continuously stirring.

  • Brush the egg wash on the edges and rim of your dishes.
  • If desired, shave truffles over the filling. Lay the pastry rounds over the top, being careful not to stretch the pastry. Seal the edges of the pastry by lightly pushing it onto the rim of your dish to make sure it is secure.
  • Brush the top and sides with more egg wash.
  • Place the pot pies on a large baking sheet and bake for 25-35 minutes, until the pastry is a nice golden, dark brown and there are no more grayish raw patches.
  • Let cool for 5 minutes before serving.
