2 clove(s) garlic, minced (more or less for your personal taste)
1 small shallot, minced
3 tablespoon(s) sherry vinegar (best quality you can find, makes a huge difference) you can use balsamic or red wine vinegar (6 or 7 percent acidity), but sherry is the best.
1/2 teaspoon(s) coarse-grained salt (sea salt)
1 tablespoon(s) dijon mustard
4 to 5 tablespoon(s) olive oil
3 tablespoon(s) flat leaf parsley (rough chopped) or mixed herbs
- cracked black pepper to your taste

Steps:

  • Place garlic, shallot, vinegar and salt in a smal bowl and let stand for at least 30 minutes. This will take the peppery bite out of the garlic and shallot.
  • Whisk in mustard, oil and herbs.
  • Add pepper to taste.
  • This is also wonderful as a marinade and served as a dipping sauce for chicken.

To vary the flavor, you could use walnut or hazelnut oil or, if you want to play down the flavor of oil, a neutral oil like grapeseed or canola. It continues with good wine vinegar, which could take you from champagne vinegar to an extra-mild Asian rice vinegar. (Balsamic and sherry vinegars are too dominant for many uses.) Lemon juice is a fine substitute, but because it is less acidic than most vinegars, you will need more of it.
