2 Tbs. Hungarian smoked paprika

1 tsp. cayenne pepper

olive oil
1 Tbs. vegetable oil
1 small onion finely diced
1 clove garlic, minced
2 Tbs. apple cider vinegar
1 Tbs. molasses
1 Tbs. brown sugar
1 Tbs. dry mustard powder
1 tsp. ground cayenne pepper
1/2 cup ketchup
1/2 cup water

Steps:

  • PORK CHOPS: Combine all ingredients except chops in a shallow plate. Brush chops with olive oil and dredge them in seasonings mixture, gently pressing it onto meat. Transfer chops to a platter and cover and refrigerate for 2 hours. Preheat grill to high heat. 1 tablespoon kosher salt
1 tablespoon sugar
1 tablespoon garlic powder
1 teaspoon freshly ground black pepper
2 tablespoons canola oil
1 (3 to 4-pound) pork loin
2 tablespoons canola oil
1/2 small red onion, diced
2 cloves garlic, minced
1 jalapeno, seeded and minced
Kosher salt and freshly ground black pepper
2 cups strawberries, tops removed, roughly chopped
1/4 cup brown sugar
1 1/2 cup ketchup
1/4 cup water
1/2 cup strawberry nectar or mixed berry nectar
1/4 cup strawberry jam
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix together all of the dry rub ingredients in a small bowl. Rub the pork with canola oil and generously sprinkle the rib all over the pork. Put in a bowl, cover and refrigerate overnight.
  • BBQ sauce: Add the oil to a medium-sized saucepan over medium heat. Once hot, add the onion, garlic, and jalapeno. Saute until soft and season with salt and pepper, to taste.   • Put the pork in a roasting pan and roast until an instant-read thermometer registers 145 degrees F, about 1 hour and 15 minutes. Brush with BBQ sauce the last 10 minutes of cooking.
  • Remove the pork from the oven and let rest for 10 minutes before slicing.

As a Washington State transplant, I have wowed a lot of Texans with my pulled pork. It is a basic slow cooker method, but it tastes like it has been slow smoke'n in a pit for days. Top it with some slaw on a bun and you have got yourself some mighty fine BBQ. If you're not a fan of sweet honey BBQ sauce, go ahead and cut back the honey and brown sugar. I changed the amounts after reading my first review, as this was first posted straight from my head and confirms my faulty memory. But I like it a little sweeter to counter the heat from the chipotle.

4 -5 lbs boston butt pork shoulder
1 (14 ounce) can tomato sauce
1 (4 ounce) can chipotle chiles in adobo
1 (12 ounce) bottle beer
1/4 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1 tablespoon seasoning salt

  • I put meat back into my crock pot on the warm and then add the sauce and stir it all up.
  • Serve on a warm roll or bun with some cole slaw.

1/8 lb salt pork, cut into 1/8-inch dice
4 lbs chuck roast
1 bay leaf
2 garlic cloves, peeled and sliced
2 teaspoons whole thyme leaves
1/2 cup fresh parsley, chopped
6 carrots, cut into 1-inch pieces
6 medium yellow onions, peeled and cut in half
1 turnip, peeled and cut into 1-inch dice
6 potatoes, peeled and cut in half
4 tablespoons butter
4 tablespoons flour
Kitchen Bouquet (optional)

Steps:

  • Heat large Dutch oven, about 6-7 quarts, and brown the salt pork (can use bacon). Remove the pork from the pan, leaving the fat in the pan. Salt and pepper the chuck roast and brown it in the fat. Brown it well on both sides, turning it with a wooden fork or spatula so you do not puncture the meat.
  • When brown, add 2 cups water to the pot and then the bay leaf, garlic, thyme and parsley.
  • Cover and simmer slowly for 2 hours, keeping about 1 cup of water in the bttom of the pot.
  • Add the carrots, onions and turnip; cover and cook for 1/2 hour. Watch that there is always a cup of water in the bottom of the pot. Add the potatoes and cook until they are tender. WATCH THAT WATER!
  • Prepare a roux of the flour and butter by melting the butter in a small frying pan and stirring in the flour. Cook for a few minutes.
  • Remove the meat and vegetables from the pan and place on a serving platter. Thicken the gravy with the roux. Use as much or as little roux as you like. The thickness of the gravy is up to you. Correct the seasoning in the gravy and serve the pot roast. You may wish to darken the gravy with some Kitchen Bouquet.

9 ounce(s) sweet baby rays original bbq sauce
9 ounce(s) sweet baby rays honey bbq sauce

Steps:

  • Place pork loin in crock pot with beef broth. Cook on high for 4 hours.
  • Remove from crock pot and shread meat.
  • Drain beef broth from crock pot
  • Add meat and BBQ sauces to the crock pot and heat through on low for another 30 min. to 1 hour.
