Tips:

  • Choose the right squash: Look for small, tender yellow squash that are about 6 inches long. Avoid any squash that has blemishes or bruises.
  • Slice the squash thinly: This will help it cook evenly and absorb the flavors of the dressing.
  • Don't overcook the squash: Cook it just until it is tender-crisp, about 2-3 minutes.
  • Use a good quality watermelon: Look for a watermelon that is ripe and has a deep red color. Avoid any watermelon that has blemishes or bruises.
  • Cube the watermelon into bite-sized pieces: This will make it easier to eat and will help the flavors of the dressing to penetrate the watermelon.
  • Make the dressing ahead of time: This will allow the flavors to meld and develop. You can make the dressing up to 3 days in advance.
  • Serve the salad chilled: This will help to keep the squash and watermelon crisp and refreshing.
