CHEESY LEEK AND POTATO BAKE
A well used recipe in my house-and so easy to make. It's great as a side dish to a main meal, or as a topping on Cottage Pies and suchlike, or quite simply a good comforting supper dish all on its own with some good thick gravy to pour on top. This is actually my husband's favourite way to eat potato. I hope you enjoy it.

CHEESY POTATO LEEK CASSEROLE BAKE
I threw this one together one night when I was in the mood for a new side dish...and I had lots of potatoes and leeks, but didn't feel like making soup. If you're in a hurry, a thawed bag of diced hash brown potatoes works well! (Cook time includes boiling potatoes.)

SEPHARDIC LEEK AND CHEESE CASSEROLE
This recipe I think is from Sephardic Flavors. I really like it, it's very close to a quiche but no crust. We also add in both potato and zucchini. We cut the salt that it calls for cause we think the cheese make it salty enough. If you are new to cooking with leeks the best way that to clean them is soak them in water for a bit, the sand will fall to the bottom.

CHEESE, EGG, & POTATO CASSEROLE
Something I dashed off tonight for dinner. I'm still working on the details to fine-tune this recipe, especially since I don't exactly remember how I made it tonight. As time goes by, I'll edit the recipe to correct some of the errors that are almost certainly here. Feel free to post your own thoughts and concerning and personal modifications to this very basic recipe.

- Add the potatoes and use your spatula to make sure the potatoes are fairly evenly coated with oil.
- Lightly grease a 13 X 9 baking pan.
- Let the potatoes cook about 5-7 minutes. Check the bottom. If the bottom of the potatoes is brown, turn the potatoes. Leave the potatoes to cook another 5-7 minutes, and then recheck them. Make sure you keep the turning to a minimum.
- Beat the 12 eggs in a large bowl. Add the milk, salt, and pepper and beat together.
- When the potatoes have been thoroughly cooked, remove them from the pan and arrange them evenly on the bottom of the 13 X 9 baking pan.
- Pour the egg mixture over the top.
- Add any of the optional ingredients.
- Cover with the cheese.
- Bake at 350 degrees F for 40 minutes or until a knife inserted in the center comes out clean.
Tips:
- Choose the right potatoes: Yukon Gold or russet potatoes are good choices for this casserole because they hold their shape well during cooking.
- Don't overcook the potatoes: You want them to be tender but still have a little bit of a bite to them.
- Use good quality cheese: A sharp cheddar or Gruyère cheese will give the casserole a rich, flavorful taste.
- Don't be afraid to experiment with different ingredients: You could add cooked bacon, sausage, or vegetables to the casserole for a different flavor variation.
- Make sure the casserole is bubbling hot before serving: This will ensure that the cheese is melted and gooey.

This potato, egg, leek, and cheese casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. It is also a great way to use up leftover potatoes and eggs. With its creamy, cheesy texture and flavorful ingredients, this casserole is sure to be a hit with everyone who tries it.
