The seasoned noodles are the real star with the crispy pork and other ingredients just there to play back up. It's usually served cold or room temperature, and many versions include either dried or whole cooked shrimp to make it a more substantial meal. I chose to leave the shrimp out of my dish, but please feel free to add them if shrimp are something you like."

- Warm a teaspoon of canola oil in a skillet over medium-high heat. Add the pork and cook for 5 minutes, stirring frequently to break the pork into tiny crumbles. Cook for another 3-5 minutes, stirring less frequently, until the pork turns deeply golden and crispy. Set aside.
- While the pork is cooking, set the noodles in a bowl and cover them with hot water to soak. Let them sit until softened, about 10 minutes or until the pork has finished cooking.
- Bring a pot of water to a boil. Drop in the noodles and cook for 1-2 minutes, until the noodles are stretchy and tender. Drain and rinse under cool water. Use a pair of kitchen shears to cut the mass of noodles 3 or 4 times: this makes the long noodles easier to eat.
- Combine the noodles, pork, green onions, cilantro, chili, and peanuts in a large bowl. Whisk together the soy sauce, fish sauce, sugar, and lime juice in a small bowl. Taste and add more of any of the ingredients to suit your tastes, then pour the sauce over the noodles. Use tongs or clean hands to lift the noodles, fold them over, and gradually work the ingredients into the noodles. Let stand at least 15 minutes before serving or refrigerate until serving. I received this from someone I don't even know in a recipe exchange. . too funny. . .but it's truly yummy as the title represents. Kids love it (and so do grownups). This recipe is made kid-friendly and mild, so if you prefer, feel free to jazz it up with spices such as garlic, onion, Italian Spices, Spike, Mrs. Dash or any other seasonings you like. You can also substitute out sausage for the beef. Bacon bits is another nice addition!

- Cook noodles as per directions on the package (in the past, I have tried whole wheat noodles and they tend to fall apart in the oven).
- Brown meat in butter (I like to season with garlic, onion and italian seasonings). Add in tomato sauce. Simmer on low for 10 minutes.
- In a separate bowl, combine cottage cheese, sour cream, and noodles. Season with salt and pepper.
- In 9x13 pan layer 1/2 of noodle mixture, all of meat sauce and then remaining 1/2 of noodles. Top with shredded cheese (use as much as you like, but 1 cup is usually a good amount) and bake at 350 degrees for 25 minutes.

Steps:
- 1. Rinse the vegetables well, make sure to get all the dirt out.
- 2. Slice the green onions & bok choi, separate the leaves of the bok choi to a different bow.
- 3. Place the shredded daikon in a smaller bowl, add 1T of soy sauce, set aside.
- 4. Cut meat to desired size, I like mine a little bigger than the bok choi.
- 5. n a small pot heat the water according to the direction on the noodle packet. Add the seasoning packet, green onions, sprouts, bok choi (not leaves) & noodles. Bring to boil, till noodles are soft and bok choi is tender. In the noodles when the bok choi is tender add the meat, stir in & add the leaves and cover, turn off heat.
- 6. In the meantime prepare your bowl, add the rest of soy sauce, chili oil, sesame oil & rice vinegar. Pour the noodles into your bowl & garnish with shredded daikon mixture & sweet chili sauce if desired. Enjoy!!
