TANGY, ZESTY OIL AND VINEGAR POTATO SALAD

Tangy, Zesty Oil and Vinegar Potato Salad image

The best potato salad you've never had. For when your craving that certain ZING from vinegar...I don't like regular potato salad. I don't like sweet relish, eggs, or miracle whip in my potato salad. The sharp onion with the vinegar balances the soft potato texture. Inexpensive and college budget approved. For more of a bite, add two to three teaspoons of whole grain mustard along with the olive oil. Try this!! Yumm....From Bon Appetit, 2009. **Note: To use smaller potatoes, cook time is about 5 minutes less.

10 MINUTE LOW-FAT POTATO SALAD

10 Minute Low-Fat Potato Salad image

Potato salad from scratch in just 10 minutes, and it's low fat too. I love the creamy taste of the dressing, and the olives compliment the mustards. This can easily be double to accommodate a larger family, however it would take about 5 minutes longer to prepare.

Tips:

  • For a creamier potato salad, use russet potatoes instead of waxy potatoes.
  • To save time, boil the potatoes the day before and refrigerate them overnight.
  • If you don't have time to boil the potatoes, you can also microwave them. Just prick the potatoes with a fork and microwave them on high for 5-7 minutes per potato.
  • For a healthier potato salad, use Greek yogurt or low-fat mayonnaise instead of regular mayonnaise.
  • Add some chopped vegetables to the potato salad for extra flavor and nutrition. Good options include celery, carrots, onions, and bell peppers.
  • To make the potato salad ahead of time, prepare it up to 24 hours in advance. Just store it in the refrigerator and let it come to room temperature before serving.

This zesty low-fat potato salad is a delicious and healthy side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a light and refreshing salad, give this recipe a try!
