1/4 cup sour cream

1 tablespoon cornstarch
1 tablespoon Chinese rice wine or dry sherry
1 1/2 pounds skinless, boneless chicken breasts, diced
2 tablespoons oyster sauce
1 tablespoon hoisin sauce
1 tablespoon low-sodium soy sauce
1 tablespoon Chinese rice wine or dry sherry
1 teaspoon toasted sesame oil
2 teaspoons cornstarch
2 bundles cellophane noodles
Peanut oil, for frying
4 tablespoons peanut oil
3 cloves garlic, minced
1 teaspoon minced peeled ginger
1 jalapeno pepper, seeded and minced
4 scallions; 2 minced, 2 cut into 1-inch pieces
Kosher salt
1/4 teaspoon sugar
1/2 pound shiitake mushrooms, stemmed and diced
3/4 cup diced water chestnuts
Small lettuce leaves, for serving
Soy sauce, chili paste and/or hot mustard, for serving

Steps:

  • Prepare the chicken: Whisk the egg white, cornstarch and rice wine in a bowl. Add the chicken and toss to coat. Cover and refrigerate at least 30 minutes. Make the stir-fry sauce: Whisk 1/3 cup water, the oyster, hoisin and soy sauces, the rice wine and sesame oil in a bowl, then whisk in the cornstarch until dissolved.
  • Fry the noodles: Pull the noodles apart into sections. Heat 3/4 inch peanut oil in a medium saucepan until a deep-fry thermometer registers 380 degrees F. Working in batches, press the noodles into the oil with a spatula until they puff, 5 to 10 seconds. Drain on paper towels.
  • Make the stir-fry: Heat 2 tablespoons peanut oil in a large skillet over medium-high heat. Add the chicken and cook, stirring, 2 to 3 minutes. Remove with a slotted spoon to a plate. Add the remaining 2 tablespoons peanut oil to the skillet; when almost smoking, stir in the garlic, ginger, jalapeno and minced scallions, then add 1/2 teaspoon salt and the sugar and stir-fry 30 seconds. Add the mushrooms, water chestnuts and scallion pieces and stir-fry 2 minutes. Add the stir-fry sauce and chicken and cook 1 minute. 3 split (1 1/2 whole) chicken breasts, bone in, skin on
Olive oil
Kosher salt
Freshly ground black pepper
1 1/2 cups good mayonnaise
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Gray's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews, chopped
6 tortillas

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and shred the chicken in pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
  • Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews to the chicken.
  • Fill the center of each tortilla with the chicken mixture. Fold the 2 sides of the tortilla over the filling so that the sides overlap. Roll the tortilla from bottom to top, and cut in half diagonally.

1 teaspoon kosher salt, divided
1 ½ cups all purpose flour
½ cup cornstarch
½ teaspoon baking powder
1 cup buttermilk
2 teaspoons hot sauce
1 large egg
2 cups vegetable oil, or as needed
2 ½ tablespoons cayenne pepper
1 tablespoon brown sugar
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon freshly ground black pepper
8 flour tortillas
2 cups shredded iceberg lettuce
1 cup bread and butter pickles
⅓ cup mayonnaise
¼ cup reserved frying oil

Steps:

  • Make the fried chicken: Cut the Walmart Breast Tenderloins into 1-inch (2.54 cm) cubes and season evenly with ½ teaspoon salt.

ZIPPY'S FRIED CHICKEN

I found this recipe on the KaukauTime blog. I haven't tried it yet, but wanted to save it since I miss the taste of Zippy's! Note: The secret of Zippy's Crispy Fried Chicken is the paprika and flour. The paprika and flour will make the chicken crispy without it being overly battered. Adding a bit of cornstarch will make it even more crispier if you prefer it this way. The more paprika you add will also make the chicken darker.

1 (3 -4 lb) fresh whole broiler-fryer chickens
2 cups wheat flour
1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons white pepper
1 tablespoon msg (I'm not advocating for this one..you can)
2 teaspoons fresh cracked black pepper
1 pinch coarse hawaiian rock salt (or two!) or 1 pinch kosher salt (or two!)
canola oil (for deep frying)
warm water, to cover chicken

Steps:

  • Rinse and cut up chicken into parts easy for frying.
  • Drain and in colander and put in clean mixing bowl and cover with warm water.
  • Add 2 big pinches of Hawaiian rock or kosher salt to bowl to create a salt brine for the chicken.
  • Soak chicken parts for 10 minutes.
  • Drain in colander and do not rinse.
  • In another mixing bowl add dry ingredients such as flour, garlic powder, paprika, white/black pepper, and MSG.
  • Mix with wire whisk or blend in a blender to remove flour lumps.
  • Add drained chicken pieces to mixing bowl of dry ingredients.
  • Dredge chicken parts well to make sure it covers the whole piece.
  • Shake excess flour off of chicken and set aside on tray or cookie sheet while you're heating up oil.
  • Heat canola oil in wok, deep frying pan, or dedicated deep fryer with oil enough to cover chicken pieces.
  • Heat oil to 350-375°F.
  • Add chicken in 2 batches.
  • Chicken batches will cook for approximately 15mins or until golden brown all over.
  • Drain on paper towels and keep in 150°F oven to keep warm.

2/3 cup buttermilk
1 -2 teaspoon hot chili sauce, sriracha
1 cup cornstarch
2 eggs

1 1/2 cups corn, flake crumbs
1/4 cup macadamia nuts, ground fine
1/3 cup shredded coconut
2 tablespoons flax seeds, ground
1/3-1/2 cup oil (optional)
cooking spray (optional)
1/2 cup barbecue sauce (Sweet Baby Rays is good.)
1 -2 teaspoon hot chili sauce, sriracha
1 tablespoon honey

Steps:

  • Lightly flatten the chicken breasts to even thickness. Cut each into 4 strips. In a bowl combine the buttermilk and hot chili sauce. Place the chicken strips into buttermilk mixture; cover with plastic wrap and refrigerate 1 hour.
  • When ready to cook the chicken breasts, measure out the cornstarch and place in shallow dish. Beat eggs in a shallow dish with a couple of tablespoons water until thoroughly combined; set aside. Place the cornflake crumbs in a third shallow dish, stir in ground nuts and coconut.
  • Remove chicken strips from buttermilk allowing excess milk to drain off. Dip each strip into cornstarch and then dip in egg. Roll each piece of chicken in crumb mixture, pressing down lightly to ensure even coating. As the chicken strips are coated, place on a baking rack and allow to stand for 15 to 20 minutes.
  • For Frying: In a heavy skillet over medium high heat, warm the oil. When oil is sizzling hot add in the chicken strips a few at a time. Shallow fry turning once, until golden brown and crispy, about 3 minutes per side. Place the cooked chicken on a clean baking rack and allow to stand in a warm oven until ready to serve. Repeat process until all of the chicken is cooked, adding oil as necessary.
  • To Bake: Preheat oven to 400 degrees. Spray a baking rack with non-stick cooking spray. Place the coated chicken strips on rack, spay with cooking oil and place in preheated oven. Cook 10 minutes, turn strips and cook and additional 6 to 10 minutes or until crispy and cooked through.
  • For the sauce: Put all ingredients in a small saucepan and warm over low heat. Serve and enjoy!
