1 cup Bisquick baking mix
1 medium onion, chopped
1 tablespoon fresh minced garlic
1 pinch cayenne pepper (optional or to taste)
1/2 cup grated parmesan cheese
1/2-1 teaspoon oregano
1 teaspoon dried parsley (or to taste)
1/2 teaspoon seasoning salt (or to taste)
fresh ground black pepper (to taste)
1 cup grated cheddar cheese (optional) or 1 cup mozzarella cheese (optional)

Steps:

2 cups shredded unpeeled zucchini
