BLONDIE'S STUFFED CREMINIS image

This appetizer is a fave to take to potlucks, or serve @ home preceding a nice meal. It is a frequently requested dish also. Ad lib it the way you would like it~hey we're talking mushrooms here...how bad could it get?

Number Of Ingredients 8

1 dozen silver dollar size creminis (baby portabellas)
4 oz cream cheese, room temperature
1 green onion, thinly sliced (green and white parts)
5 oz cooked baby shrimp, finely chopped
**or**
5 oz cooked crabmeat, finely minced
1/4 c italian bread crumbs
4 oz freshly grated parmesan or sharp cheddar cheese

Steps:

  • 1. Remove stems from creminis (freeze for stock for another time.) Clean the caps with a damp clean cloth, or paper towel, just before stuffing them.
  • 2. Mix together the rest of ingredients, with a wooden spoon.
  • 3. Stuff the mushrooms with the seafood-cheese mixture.
  • 4. Pre-heat oven to 400*.
  • 5. Spray a rimmed cookie sheet and place stuffed creminis on it.
  • 6. Bake for 15-17 minutes, depending on your oven. Serve hot if possible. Of course you may double or triple recipe according to how many guests you are expecting.
