BONNIE'S SHRIMP WITH A KICK image

Number Of Ingredients 17

1 C. all purpose flour
1 t. kosher salt
1 t. freshly ground pepper
1 t. cajun seasoning
1 t. adobo
4 T. Extra virgin olive oil
4 T. sweet butter (unsalted)
6 Garlic cloves (crushed)
1 lb. u-15 shrimp (jumbo)
1 T. capers
10 green olives w/pimentos, cut
in half
1 jalapeno cut into small dice
8 oz. button or crimeni
mushrooms cut in half
4 oz. white wine or marsala wine
8 oz. chicken stock

Steps:

  • Mix together first 5 ingredients in shallow bowl. Heat olive oil and butter in 12 inch saute pan over medium heat. Dredge shrimp in flour mixture and then add to pan. Add garlic and saute for 2 minutes. Turn shrimp and cook for additional 1 minute. Remove shrimp and set aside temporarily. Add capers, olives, and mushrooms and jalapeno.Saute for 1 minute. Add wine and chicken stock. Raise heat to high and simmer for 2 minutes. Lower heat to low and return shrimp just to warm up with sauce. Can be served over pasta, rice or accompanied by broccoli, spinach or other green vegetable
