Butternut Squash Pie image

Tastes pretty much like pumpkin pie, but its something different and fun to make.

Number Of Ingredients 12

pastry for single pie crust
1 1/4 c sugar
4 1/2 tsp cornstarch
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground ginger
1/2 c butter, softened
3 c mashed, cooked, butternut squash
2 eggs
1/2 c milk
3 tsp vanilla
whipped cream (optional)

Steps:

  • 1. line a 9-inch pie plate with pastry. Trim and flute edges if desired.
  • 2. In a large bowl, combine sugar, spices, butter, eggs, milk and vanilla on low speed of electric mixer.
  • 3. Beat in squash until smooth.
  • 4. Cover edges loosely with foil. Bake 40-45 minutes or until fork comes out clean.
  • 5. Cool pie for 1 hour. Refrigerate until chilled.
  • 6. Serve with Whipped cream if desired.
