Celeriac Salad (Celery Root) image

If you haven't tried Celery root try it. It looks very ugly unpeeled but when undressed look 100% better. It has the flavor of celery and can be used in so many ways.

I wasn't sure I would like this salad, but I was pleasantly surprised. The celeriac was not as strong as I thought it would be, and the dressing was delicious.

I love the combination of flavors in this salad. The celeriac is earthy and slightly bitter, while the apples and walnuts add sweetness and crunch. The dressing is also perfect.
