Cheesy Breakfast Casserole image

This breakfast casserole is easy, & makes a wonderful Easter Mornin' breakfast. or for that matter .."any" mornin' breakfast... Smiles.

2 pkg 12 oz. ea. breakfast sausage links
6 english muffins, cut into 1-in. cubes
1/4 c butter, melted
1 c cheddar cheese, shredded
1 c mozzarella cheese, shredded
1/2 c onion, chopped
12 lg. eggs
2 c milk
salt & pepper to taste.
1/4 c bacon bits
red or green pepper opt.

Steps:

  • 1. Cook Sausage according to pkg. directions. Cool slightly; cut into 1/4-in. slices. In a greased 13x9 in baking dish, layer half the English muffin cubes & half the cooked sausage. Repeat layers~!
  • 2. Drizzle with butter & top with the cheese, onion, (this is where I added some ham or bacon.)
  • 3. In a lg. bowl, combine the eggs, milk, salt & pepper. Pour over casserole. Sprinkle with Bacon.
  • 4. Cover & refrigerate overnite. Remove from the refrigerator 30 min. before baking. Uncover and bake at 350 degrees for 45-50 min., or until knife inserted into the center comes out clean. Let stand 5 min.
