Cherry Filled Ableskiver Recipe - (4.5/5) image

Provided by Foodiewife

Number Of Ingredients 12

OPTIONAL FILLING:
4 eggs, separated
2 cups buttermilk
1 teaspoon vanilla
1/4 cup melted unsalted butter
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon fine sea salt
2 tablespoons sugar
1 tablespoon butter for pan
1/2 cup Nutella
1 banana, sliced into quarters lengthwise and then into small chunks

Steps:

  • Beat egg whites until stiff but not dry, and set aside. In a small bowl, whisk together the egg yolks, buttermilk, vanilla and butter. In another bowl, whisk together the flour, baking powder, salt and sugar. Combine the yolk mixture into the flour mixture and whisk until well blended. The batter will be a little lumpy. Using a rubber spatula, gently fold in the egg whites in two additions. Heat an aebleskiver pan over medium heat and brush each well with melted butter. Pour about 1 tablespoon of the batter into each well. Optional: Add 1/2 teaspoon of Nutella and 1 to 2 chunks of banana to each well. Then top off each well with enough batter to fill. Cook about 3 minutes or until golden brown on the bottom and bubbly around the edges. Quickly turn each aebelskiver over, using a long wooden skewer or toothpick, trying not to puncture the balls. Continue cooking until golden on the bottom, about 2 minutes more. Transfer to a plate and repeat the process with the remaining batter.

I'm not sure what I did wrong, but my Aebleskivers turned out really dry. I think I might have overcooked them.

These were a bit too dense for my taste. I think I'll try a different recipe next time.

These were really good, but I think they would have been even better with a different filling. I'm going to try them with apples next time.

I followed the recipe exactly, but my Aebleskivers didn't turn out as fluffy as I expected. They were still tasty, but I was a little disappointed.

These were a little too sweet for my taste, but my kids loved them. They're a great treat for a special occasion.

These were really good! The only thing I would change is to add a little more sugar to the batter. Other than that, they were perfect.

I was a little hesitant to try this recipe because I'm not a fan of cherries, but I'm so glad I did! The cherries added a subtle sweetness that was really nice. I'll definitely be making these again.
