CHICKEN, EGGPLANT, AND ARTICHOKE SKILLET image

Number Of Ingredients 6

1 lb boneless skinless chicken breasts
1 med eggplant, cut in pieces (leave skin on)
1 can artichoke hearts
2 cups brown rice
1 can diced tomatoes (fire roasted)
1 cup salsa

Steps:

  • Put eggplant in skillet and let soften. Add in chicken. Cook through. Add artichokes and diced tomatoes. Let simmer while rice is cooking. Add in rice and salsa.
