Chicken Enchiladas image

I love cooking, especially recipes that involve very few ingredients and very little time.

8 flour tortillas
2 c chicken, cooked & shredded
2 c shredded cheese, cheddar or monterey jack
1 c salsa
3 Tbsp butter
3 Tbsp flour
2 c chicken broth
1 c sour cream
1 1/4 can(s) diced green chiles, 4 oz.

Steps:

  • 1. Preheat oven to 350. Spray a 9x13 pan with cooking spray.
  • 2. Combine chicken, 1 cup of cheese and salsa. Divide and roll into the tortillas and place in baking dish.
  • 3. In a skillet, melt butter. Stir in flour and cook for about a minute. Add chicken broth and whisk until smooth. let cook until sauce is thick and bubbly. Remove from heat and stir in sour cream and chiles.
  • 4. Pour sauce over enchiladas and top with the remaining cheese. Bake for 22 minutes and then place under broiler for about 3 minutes to brown the top.
