Steps:
- 1. Mix all filling ingredients in a mixing bowl, mixing completely. Set aside.
- 2. Prepare pie crust. If making heavily exposed pie crust, use a pie ring or cover entire pie with tin foil for half of the cooking time. Use this recipe: https://www.justapinch.com/recipes/dessert/pie/cinnamon-coconut-pie-crust.html
- 3. Pour in filling. Sprinkle toppings.
- 4. Place in oven at 350F for 30-40 minutes, or until the center is set.
- 5. Refrigerate for 3 hours-overnight.
