~ Chopstick Tuna Bake ~ image

A touch of Asian, tuna casserole. Enjoy!

2 Tbsp butter
1/2 c chopped onion
1 c chopped celery
10 oz drained white albacore tuna
1 - 14.5 oz cream of mushroom soup
1/2 c water
1/4 c mayonnaise
1 c frozen peas, thawed
1 small can, drained mushrooms
Salt and pepper to taste
2 1/4 c chow mein noodles, divided
1 c shredded swiss cheese or favorite

Steps:

  • 1. Preheat oven to 375 degree F. Grease an 11 x 7 baking dish. In a small sauce pan over med heat, add butter. Stir in celery and onion, cook until tender crisp. In a med bowl, whisk together soup, water and mayonnaise until smooth. Stir in onion and celery. Add 1 1/4 cup of noodles, mushrooms, salt, pepper, tuna, peas.
  • 2. Pour into prepared dish, topping with remaining noodles and shredded Swiss.
  • 3. Bake for 40 - 45 minutes or until heated through and bubbly. Serve with a salad. I
