Cinnamon Bun Oatmeal image

Oatmeal with the taste of Cinnabon! And a lot lighter in calories (a classic Cinnabon weighs in at a whopping 730 calories!). Adapted from a recipe at Thought 4 Food http://bit.ly/31XO2m

Number Of Ingredients 15

1 teaspoon brown sugar
1 teaspoon water
1/2 teaspoon butter
1 pinch cinnamon
1 pinch salt
2 tablespoons coarsely chopped walnuts or 2 tablespoons coarsely chopped pecans
1 ounce low-fat cream cheese or 1 ounce neufchatel cheese, at room temperature
1 tablespoon milk
1/4 teaspoon pure vanilla extract
1 teaspoon brown sugar
1/4 cup steel cut oats
1/2 medium banana, thinly sliced
3/4 cup water
1 dash salt
1 dash cinnamon

Steps:

  • In a small saucepan, heat the brown sugar, water, butter, salt and cinnamon over medium-high until bubbly. Add the nuts and stir to coat. Cook 3-5 minutes until very thick and syrupy, and the nuts are well-coated. Spread on baker's parchment in a single layer and allow to cool to room temperature.
  • Meanwhile, whisk together the frosting ingredients. Cover and set aside until ready to use (refrigerate if not using for more than an hour).
  • In a small saucepan, combine all oatmeal ingredients. Bring to a simmer then cook over medium-low heat, whisking frequently, until desired consistency is achieved, about 12 minutes.
  • Transfer oatmeal to a serving bowl. Top with frosting, then with nuts. Enjoy!
