CINNAMON POPOVERS image

Yield 4-6 servings

Number Of Ingredients 7

3 eggs
1 cup milk, room temp
1 cup bread flour
2 1/2 tablespoons unsalted butter, melted
1/2 teaspoon salt (I add 1/4 for lower sodium diets)
1 teaspoon cinnamon
vegetable shortening for greasing pans.

Steps:

  • Combine and whisk dry ingredients and wet ingredients separately. Put together and whisk well. Mix will be runny, cover and let sit while you preheat oven 400 degrees (~ 10 min). Heat non-stick popover or small muffin pan for 2-5 minutes in oven. Carefully take out and grease pan (if not non-stick). Fill cups half full and bake for 40 minutes. Do not open oven. Serve immediately, hot, with butter and selection of jams.
