It was a recipe that was given to my mother when I was in grade school. It's been a comfort food for me ever since. I even turned some freinds on to it through the years. It is completely versitle, you can vary the amounts of the components and even the flavors of jello and fruit.

Time 15m

Number Of Ingredients 4

1 pkg frozen whipped topping, thawed, any size, any style
1 pkg cottage cheese, any curd size, any style
1 pkg gelatin, any flavor, any size
1 pkg canned fruit, drained. or frozen fruit, thawed and drained

Steps:

  • 1. Here's where the versitility comes into play. You can use 8 oz packages of the whipped topping and cottage cheese, and a small serving sized box of gelatin, and a small can of friut, well drained. Or go big with the 16 oz size packages, and the large box of gelatin, your favorite flavor along with whatever fruit you like to match. You can tailor the formula to suit your tastes. I typically use the lower fat formulas of the topping and cottage cheese; 8 oz each, and the smaller serving of the sugar free gelatian and fruit in juice. My favored combos are lime gelatin with pineapple, or orange gelatin with either orange segments or pineapple for a really tropical kind of salad. (It really can be any combo you like)
  • 2. Open and drain the can(package) of friut well. While that is draining, in a large bowl, combine the cottage cheese and whipped topping. Stir in the dry package of gelatin, along with the drained fruit. Fold well to blend, cover the bowl and chill.
  • 3. When ready to serve, spoon out the desired amount into a bowl. Enjoy. If you don't understand anything above, leave a comment and I'll reply soon as I can.

I thought this salad was just okay. The dressing was a little bland, and the marshmallows were a bit too chewy.
