Cream of Tomato (Tofu) image

A healthy alternative to cream of tomato soup, this recipe uses soft tofu instead of cream or milk. Garnish with chopped fresh basil leaves.

4 cups tomatoes, diced
½ onion, chopped
1 tablespoon olive oil
1 (14 ounce) package soft tofu
2 (10.75 ounce) cans condensed tomato soup
salt to taste
ground black pepper to taste

Steps:

  • Saute tomatoes and onion in olive oil until onions are clear.
  • Blend the canned soup and tofu in a blender, then add this blended mixture to the sauteed onions and tomatoes. Warm through and add water as needed. Add salt and pepper to taste, and top with chopped fresh basil.

I've made this soup many times and it's always a hit! I love that it's so easy to make and that it's a great way to use up leftover tomatoes.

This soup was delicious! I used vegetable broth instead of chicken broth, and it was still very flavorful and hearty.
